🍰 Berry Cake from the Baking Sheet

Ingredients
- frozen berry mix 700 g
- whipping cream 300 g
- sugar 200 g
- salt pinch
- eggs 4 pcs.
- plain yogurt 150 g
- wheat flour, Type 405 450 g
- baking powder 2 tsp
- vanilla sugar 4 tsp
Instructions
- 1. Thaw the berries preferably overnight. Then place them in a sieve to drain well. Preheat the oven to 200 °C (fan).
- 2. In a bowl, lightly whip the cream using a hand mixer with a whisk. Gradually add the sugar and salt. Incorporate the eggs one at a time, mixing well. Stir in the yogurt. Finally, quickly fold in the flour and baking powder.
- 3. Spread the batter evenly on a baking sheet lined with parchment paper. Distribute the berries on top, pressing them down slightly, sprinkle with vanilla sugar and bake in the oven for about 25 minutes until golden brown. Allow the berry cake to cool before serving.
