🍰 Fruity Berry Peach Compote

Ingredients
- Peaches 4 pcs.
- Strawberries 500 g
- Raspberries, fresh 250 g
- Blueberries, fresh 250 g
- Red currants, fresh 250 g
- Apple juice 100 ml
- Vanilla sugar 2 tsp
- Sugar 100 g
- Cornstarch 1 tsp
Instructions
- 1. Pour boiling water over the peaches in a bowl.
- 2. Immediately shock the peaches with cold water.
- 3. Peel the skin off the peaches.
- 4. Halve the peaches and remove the pit.
- 5. Cut the peach flesh into small cubes.
- 6. Wash the berries thoroughly under running water.
- 7. Remove any unripe or damaged berries.
- 8. Remove the green stem from the strawberries.
- 9. Cut the strawberries into cubes as well.
- 10. Strip the currants from their stems.
- 11. Warm the apple juice in a pot together with the vanilla sugar and the sugar.
- 12. Add the peach cubes to the warm liquid.
- 13. Let the peaches cook for about 3 minutes.
- 14. Now add the prepared berries.
- 15. Let everything cook together for another 4 minutes.
- 16. Stir the starch in a small bowl with a little cold water until smooth.
- 17. Stir the starch mixture into the boiling fruit mass.
- 18. Let the compote simmer for approx. 2 minutes until it thickens.
- 19. Remove the pot from the heat.
- 20. Let the berry peach compote cool down.
