  1. 1. Pour boiling water over the peaches in a bowl.
  2. 2. Immediately shock the peaches with cold water.
  3. 3. Peel the skin off the peaches.
  4. 4. Halve the peaches and remove the pit.
  5. 5. Cut the peach flesh into small cubes.
  6. 6. Wash the berries thoroughly under running water.
  7. 7. Remove any unripe or damaged berries.
  8. 8. Remove the green stem from the strawberries.
  9. 9. Cut the strawberries into cubes as well.
  10. 10. Strip the currants from their stems.
  11. 11. Warm the apple juice in a pot together with the vanilla sugar and the sugar.
  12. 12. Add the peach cubes to the warm liquid.
  13. 13. Let the peaches cook for about 3 minutes.
  14. 14. Now add the prepared berries.
  15. 15. Let everything cook together for another 4 minutes.
  16. 16. Stir the starch in a small bowl with a little cold water until smooth.
  17. 17. Stir the starch mixture into the boiling fruit mass.
  18. 18. Let the compote simmer for approx. 2 minutes until it thickens.
  19. 19. Remove the pot from the heat.
  20. 20. Let the berry peach compote cool down.
