🍰 Berry Cupcakes with Meringue

Ingredients
- mixed berries, frozen 300 g
- butter 120 g
- sugar 100 g
- salt pinch
- vanilla sugar 1 tsp
- eggs 5 pcs
- wheat flour, type 405 200 g
- baking powder 1 tsp
- milk 50 ml
- powdered sugar 170 g
Instructions
- 1. Ideally, thaw the berries overnight in a sieve in the refrigerator so they drain well.
- 2. Preheat the oven to 175 degrees conventional heat.
- 3. Cream the soft butter with sugar, salt, and vanilla sugar in a bowl using a hand mixer with a whisk.
- 4. Crack four eggs and add them one by one to the butter-sugar mixture.
- 5. Add flour, baking powder, and milk to the bowl and stir until a smooth batter forms.
- 6. Gently fold the berries into the batter.
- 7. Distribute the batter evenly into greased muffin cups.
- 8. Bake the cupcakes in the oven for about 20 minutes until lightly golden.
- 9. Separate the remaining egg and use the yolk for something else.
- 10. Beat the egg whites with a pinch of salt in a bowl using a hand mixer until stiff.
- 11. Add the powdered sugar tablespoon by tablespoon while stirring.
- 12. Continue beating until the mixture is thick and glossy.
- 13. Fill the meringue mixture into a piping bag with a star nozzle.
- 14. Pipe small swirls onto the pre-baked cupcakes.
- 15. Bake the cupcakes at the same oven temperature for another 15 minutes until the meringue is crisp and light.
- 16. Let the cupcakes cool.
