  2. 2. Cut an onion in half, peel it, and chop it into small cubes.
  3. 3. Wash the chives, pat them dry, and slice them into small rings.
  4. 4. Mix apple juice, vinegar, and oil together in a large bowl to create a dressing.
  5. 5. Season the dressing with salt, pepper, and sugar to taste.
  6. 6. Stir the diced onion and the drained sauerkraut into the dressing.
  7. 7. Rinse the beef steak briefly and pat it completely dry with kitchen paper.
  8. 8. Heat one tablespoon of butter in a frying pan over high heat.
  9. 9. Season the steak with salt and pepper on both sides.
  10. 10. Fry the steak for about two minutes on each side until it is golden brown.
  11. 11. Reduce the heat, cover the pan, and let the steak rest for about six minutes.
  12. 12. Melt two tablespoons of butter in a saucepan over high heat.
  13. 13. Stir the flour into the melted butter using a whisk.
  14. 14. Slowly pour in the milk while stirring continuously.
