🍽️ Juicy Beef and Sauerkraut Sandwich

Ingredients
- Sauerkraut 200 g
- onions, red 1 pc.
- chives, fresh 1 bunch
- apple juice 50 ml
- balsamic vinegar, light 2 tbsp
- rapeseed oil 2 tbsp
- salt pinch
- pepper, black ground pinch
- sugar pinch
- beef rump steaks 500 g
- butter 3 tbsp
- wheat flour, Type 405 1 tbsp
- milk 250 ml
- Gouda, grated 100 g
- chili, ground pinch
- rye bread 8 slices
Instructions
- 1. Drain the sauerkraut in a colander and rinse it thoroughly under cold water to reduce the sourness.
- 2. Cut an onion in half, peel it, and chop it into small cubes.
- 3. Wash the chives, pat them dry, and slice them into small rings.
- 4. Mix apple juice, vinegar, and oil together in a large bowl to create a dressing.
- 5. Season the dressing with salt, pepper, and sugar to taste.
- 6. Stir the diced onion and the drained sauerkraut into the dressing.
- 7. Rinse the beef steak briefly and pat it completely dry with kitchen paper.
- 8. Heat one tablespoon of butter in a frying pan over high heat.
- 9. Season the steak with salt and pepper on both sides.
- 10. Fry the steak for about two minutes on each side until it is golden brown.
- 11. Reduce the heat, cover the pan, and let the steak rest for about six minutes.
- 12. Melt two tablespoons of butter in a saucepan over high heat.
- 13. Stir the flour into the melted butter using a whisk.
- 14. Slowly pour in the milk while stirring continuously.
- 15. Bring the sauce to a boil for about three minutes.
- 16. Stir the grated cheese into the sauce.
- 17. Season the cheese sauce with salt, pepper, and a pinch of chili.
- 18. Simmer the sauce over low heat for about five minutes until the cheese is completely melted.
- 19. Remove the steak from the pan and set it aside.
- 20. Reheat the pan over medium heat.
- 21. Toast the bread slices in the pan juices for about three minutes on each side until golden brown.
- 22. Mix the prepared sauerkraut with the sliced chive rings.
- 23. Taste the sauerkraut again and adjust the seasoning with salt and pepper if necessary.
- 24. Assemble the sandwich in this order: bottom bread slice, cheese sauce, beef, sauerkraut mix, remaining cheese sauce, top bread slice.
