🍽️ Beef Burger with Fried Egg and Fresh Brioche Buns

Ingredients
- yeast, fresh 15 g
- milk 115 ml
- sugar 35 g
- wheat flour, type 405 250 g
- salt pinch
- eggs 5 pcs.
- butter 50 g
- egg yolk 1 pcs.
- oat flakes, coarse 1 tbsp
- mayonnaise 6 tbsp
- ketchup 3 tbsp
- mustard 1 tbsp
- romaine lettuce 0.5 pcs.
- roma tomatoes 2 pcs.
- onions, red 1 pcs.
- oil 4 tbsp
- beef hamburger patties 4 pcs.
- pepper, black ground pinch
Instructions
- 1. Dissolve the yeast in 100 milliliters of lukewarm milk.
- 2. Add 1 tablespoon of sugar and 2 tablespoons of flour and stir everything into a pre-dough.
- 3. Let the pre-dough rest covered for about 15 minutes.
- 4. Add the remaining flour, the remaining sugar, the salt, 1 egg, and the soft butter to a mixing bowl.
- 5. Add the pre-dough and knead everything for about 8 to 10 minutes until you have a smooth dough.
- 6. Let the dough rise covered in a warm place for about 1 hour.
- 7. Knead the dough briefly and divide it into four equal pieces.
- 8. Shape each piece into a ball and place it on a baking sheet lined with baking paper.
- 9. Press the buns slightly flat and let them rise covered for about 45 minutes.
- 10. Preheat the oven to 180 degrees Celsius top and bottom heat.
- 11. Whisk the egg yolk with the remaining milk.
- 12. Brush the buns with the egg yolk and milk mixture.
- 13. Sprinkle the buns with oat flakes.
- 14. Bake the buns on the middle rack for about 20 to 25 minutes until golden brown.
- 15. Let the buns cool on a cake rack.
- 16. Whisk mayonnaise, ketchup, and mustard in a small bowl for the burger sauce.
- 17. Wash the lettuce and pat it dry.
- 18. Tear the lettuce into pieces.
- 19. Wash the tomatoes and slice them into thin slices.
- 20. Peel the onion and slice it into thin rings.
- 21. Set the onion rings aside.
- 22. Heat 2 tablespoons of oil in a large pan.
- 23. Fry the beef patties on both sides for 3 to 4 minutes each over medium to high heat.
- 24. Heat 2 tablespoons of oil in a second pan.
- 25. Crack the eggs into the pan.
- 26. Fry the eggs over medium heat until they are fried eggs.
- 27. Season the fried eggs with salt and pepper.
- 28. Slice the brioche buns horizontally.
- 29. Optionally toast the cut surfaces briefly in a dry pan.
- 30. Spread the burger sauce on the bottom bun half.
- 31. Layer lettuce, tomato slices, more burger sauce, the beef patty, the fried egg, and the onion rings on top.
- 32. Place the top of the brioche bun on top.
- 33. Serve the burger immediately.
