🍽️ Bavarian Potato Salad with Crispy Bacon

Ingredients
- Parsley, fresh 20 g
- small potatoes, mainly firm 1 kg
- Salt pinch
- Bay leaves, dried 2 pcs
- Onions, yellow 1 pc
- Bacon strips 200 g
- Vegetable broth 150 ml
- Vinegar 3 tbsp
- Mustard 2 tbsp
- Oil 4 tbsp
- Pepper, black ground pinch
Instructions
- 1. Wash the parsley thoroughly.
- 2. Pluck the small leaves off the tough stems.
- 3. Put the parsley leaves into the mixing container.
- 4. Chop the parsley for 5 seconds on speed 10.
- 5. Remove the chopped parsley and set it aside.
- 6. Wash the potatoes thoroughly under running water.
- 7. Place the whole potatoes into the deep steam cooking insert.
- 8. Pour 1 liter of water into the mixing pot.
- 9. Add 1 teaspoon of salt to the water.
- 10. Add bay leaves to the water.
- 11. Place the steam cooking insert with the potatoes onto the pot.
- 12. Close the pot securely.
- 13. Steam the potatoes for 40 minutes on the steam cooking setting.
- 14. Peel the potatoes while they are still warm to the touch.
- 15. Slice the peeled potatoes.
- 16. Put the potato slices into a large bowl.
- 17. Empty the cooking water from the mixing pot.
- 18. Rinse the mixing pot briefly.
- 19. Halve the onion and peel it.
- 20. Put the onion pieces into the clean mixing pot.
- 21. Chop the onion for 5 seconds on speed 5.
- 22. Scrape down the onion pieces to the bottom with a spatula.
- 23. Add the bacon and 1 tablespoon of oil to the pot.
- 24. Fry the bacon for 5 minutes on the sauté setting.
- 25. Pour the broth into the bacon mixture.
- 26. Add the vinegar to the mixture.
- 27. Add the mustard to the mixture.
- 28. Add the remaining oil to the mixture.
- 29. Season the sauce with salt and pepper.
- 30. Simmer the sauce for 5 minutes at 100 degrees on speed 1.
- 31. Pour the hot bacon sauce over the potato slices.
- 32. Mix the salad gently so the slices do not break apart.
- 33. Season the salad strongly with salt and pepper to taste.
- 34. Sprinkle the finished salad with the prepared parsley.
- 35. Serve the salad immediately.
