🍰 Bavarian Cream with Fresh Strawberries

Ingredients
- gelatin leaves 2 pcs.
- eggs 2 pcs.
- milk 250 ml
- powdered sugar 80 g
- vanilla sugar 2 tsp
- whipping cream 200 g
- strawberries 500 g
- lemons 1 pcs.
Instructions
- 1. Soak the gelatin in a bowl of cold water.
- 2. Separate the eggs and set the egg whites aside.
- 3. Add the egg yolks, milk, 50 g of powdered sugar, and vanilla sugar to a pot.
- 4. Whisk the ingredients well with a hand mixer.
- 5. Heat the mixture over medium heat for about 5 minutes.
- 6. Stir constantly until the cream is hot and frothy.
- 7. Remove the pot from the heat.
- 8. Squeeze the soaked gelatin lightly.
- 9. Stir the gelatin into the warm cream until it has completely dissolved.
- 10. Pour the mixture into a bowl.
- 11. Let the cream cool for about 15 minutes.
- 12. Whip the cream in a separate bowl with a hand mixer until stiff.
- 13. Gently fold the whipped cream into the cooled cream.
- 14. Fill the cream into 4 glasses.
- 15. Let the glasses set in the refrigerator for at least 2 hours.
- 16. Wash the strawberries thoroughly.
- 17. Remove the stems from the strawberries.
- 18. Cut the strawberries into small cubes.
- 19. Rinse a lemon under hot water.
- 20. Grate about 1 teaspoon of the lemon zest finely.
- 21. Cut the lemon in half.
- 22. Squeeze the juice from the lemon.
- 23. Place the strawberry cubes in a bowl.
- 24. Add the lemon zest, lemon juice, and the remaining powdered sugar.
- 25. Mix everything well.
- 26. Let the strawberry mixture sit for a short while.
- 27. Serve the strawberries together with the chilled Bavarian cream.
