  1. 1. Soak the gelatin in a bowl of cold water.
  2. 2. Separate the eggs and set the egg whites aside.
  3. 3. Add the egg yolks, milk, 50 g of powdered sugar, and vanilla sugar to a pot.
  4. 4. Whisk the ingredients well with a hand mixer.
  5. 5. Heat the mixture over medium heat for about 5 minutes.
  6. 6. Stir constantly until the cream is hot and frothy.
  7. 7. Remove the pot from the heat.
  8. 8. Squeeze the soaked gelatin lightly.
  9. 9. Stir the gelatin into the warm cream until it has completely dissolved.
  10. 10. Pour the mixture into a bowl.
  11. 11. Let the cream cool for about 15 minutes.
  12. 12. Whip the cream in a separate bowl with a hand mixer until stiff.
  13. 13. Gently fold the whipped cream into the cooled cream.
  14. 14. Fill the cream into 4 glasses.
  15. 15. Let the glasses set in the refrigerator for at least 2 hours.
  16. 16. Wash the strawberries thoroughly.
  17. 17. Remove the stems from the strawberries.
  18. 18. Cut the strawberries into small cubes.
  19. 19. Rinse a lemon under hot water.
  20. 20. Grate about 1 teaspoon of the lemon zest finely.
  21. 21. Cut the lemon in half.
  22. 22. Squeeze the juice from the lemon.
  23. 23. Place the strawberry cubes in a bowl.
  24. 24. Add the lemon zest, lemon juice, and the remaining powdered sugar.
  25. 25. Mix everything well.
  26. 26. Let the strawberry mixture sit for a short while.
  27. 27. Serve the strawberries together with the chilled Bavarian cream.
