  1. 1. Preheat the oven to 250 degrees Celsius using the grill setting.
  2. 2. Place the marzipan base and 75 grams of powdered sugar into a bowl.
  3. 3. Mix the ingredients with a hand mixer until you have a smooth dough.
  4. 4. Divide the marzipan dough into three equal portions.
  5. 5. Dust some powdered sugar onto your work surface.
  6. 6. Roll each marzipan portion into a square measuring 22 by 22 centimeters.
  7. 7. Put butter, sugar, salt, and vanilla sugar into a separate bowl.
  8. 8. Beat these ingredients until creamy.
  9. 9. Add the eggs one by one and keep stirring until the sugar has dissolved.
  10. 10. Mix flour, starch, and baking powder in a small bowl.
  11. 11. Sift the flour mixture into the butter-sugar mixture little by little.
  12. 12. Stir the milk and Amaretto into the batter.
  13. 13. Line the bottom of a square springform pan (22 by 22 centimeters) with baking paper.
  14. 14. Put four tablespoons of batter into the pan and spread it out evenly.
  15. 15. Bake the first layer under the grill on the second rack for about three minutes.
  16. 16. Take the pan out when the surface is brown.
  17. 17. Put three tablespoons of batter on top of the baked layer.
  18. 18. Bake again for about three minutes until the layer is golden brown.
  19. 19. Repeat the layering and baking process with the remaining batter.
  20. 20. After the third layer, place one of the marzipan sheets into the pan.
  21. 21. Spread batter over the marzipan and continue baking.
  22. 22. After the fifth layer, place the second marzipan sheet into the pan.
  23. 23. Spread batter over this as well and bake until golden brown.
  24. 24. Let the finished Baumkuchen cool down in the pan.
  25. 25. Spread cherry jam over the top of the cake.
  26. 26. Place the final marzipan sheet on top of the cake.
  27. 27. Cut the cake into 16 equal squares first.
  28. 28. Cut each square diagonally into two triangles.
  29. 29. Bring about 500 milliliters of water to a boil in a pot.
  30. 30. Place a metal bowl over the hot water.
  31. 31. Melt the chocolate coating in the metal bowl over the water bath.
  32. 32. Dip the Baumkuchen pieces into the melted chocolate coating.
  33. 33. Let the excess chocolate coating drip off.
  34. 34. Place the coated pieces on a cooling rack.
  35. 35. Let the chocolate cool in the air.
  36. 36. Serve the finished pieces with a cup of coffee.
