🍰 Crunchy Baumkuchen Pieces with Marzipan

Ingredients
- Marzipan base 400 g
- Powdered sugar 90 g
- Butter 225 g
- Sugar 225 g
- Salt pinch
- Vanilla sugar 20 g
- Eggs 4 pcs.
- Wheat flour, Type 405 175 g
- Cornstarch 125 g
- Baking powder 1 tsp
- Milk 70 ml
- Amaretto 4 tbsp
- Sour cherry jam 50 g
- Coating chocolate, dark 400 g
Instructions
- 1. Preheat the oven to 250 degrees Celsius using the grill setting.
- 2. Place the marzipan base and 75 grams of powdered sugar into a bowl.
- 3. Mix the ingredients with a hand mixer until you have a smooth dough.
- 4. Divide the marzipan dough into three equal portions.
- 5. Dust some powdered sugar onto your work surface.
- 6. Roll each marzipan portion into a square measuring 22 by 22 centimeters.
- 7. Put butter, sugar, salt, and vanilla sugar into a separate bowl.
- 8. Beat these ingredients until creamy.
- 9. Add the eggs one by one and keep stirring until the sugar has dissolved.
- 10. Mix flour, starch, and baking powder in a small bowl.
- 11. Sift the flour mixture into the butter-sugar mixture little by little.
- 12. Stir the milk and Amaretto into the batter.
- 13. Line the bottom of a square springform pan (22 by 22 centimeters) with baking paper.
- 14. Put four tablespoons of batter into the pan and spread it out evenly.
- 15. Bake the first layer under the grill on the second rack for about three minutes.
- 16. Take the pan out when the surface is brown.
- 17. Put three tablespoons of batter on top of the baked layer.
- 18. Bake again for about three minutes until the layer is golden brown.
- 19. Repeat the layering and baking process with the remaining batter.
- 20. After the third layer, place one of the marzipan sheets into the pan.
- 21. Spread batter over the marzipan and continue baking.
- 22. After the fifth layer, place the second marzipan sheet into the pan.
- 23. Spread batter over this as well and bake until golden brown.
- 24. Let the finished Baumkuchen cool down in the pan.
- 25. Spread cherry jam over the top of the cake.
- 26. Place the final marzipan sheet on top of the cake.
- 27. Cut the cake into 16 equal squares first.
- 28. Cut each square diagonally into two triangles.
- 29. Bring about 500 milliliters of water to a boil in a pot.
- 30. Place a metal bowl over the hot water.
- 31. Melt the chocolate coating in the metal bowl over the water bath.
- 32. Dip the Baumkuchen pieces into the melted chocolate coating.
- 33. Let the excess chocolate coating drip off.
- 34. Place the coated pieces on a cooling rack.
- 35. Let the chocolate cool in the air.
- 36. Serve the finished pieces with a cup of coffee.
