🍲 Creamy Basil Soup with Pine Nuts

Ingredients
- onions, yellow 1 pc.
- potatoes, mostly waxy 500 g
- basil, fresh 85 g
- vegetable broth 500 ml
- olive oil 1 tbsp
- salt pinch
- pepper, black ground pinch
- pine nuts 30 g
- sour cream 200 g
Instructions
- 1. Halve the onion and remove the skin.
- 2. Dice the onion finely.
- 3. Peel the potatoes.
- 4. Cut the potatoes into large cubes.
- 5. Wash the basil thoroughly.
- 6. Shake the basil dry.
- 7. Pluck the basil leaves from the stems.
- 8. Slice the basil leaves into thin strips.
- 9. Heat a pot with one tablespoon of oil.
- 10. Sauté the onions in it until translucent.
- 11. Add the potato cubes to the pot.
- 12. Pour the broth into the pot.
- 13. Season the soup with salt and pepper.
- 14. Let the soup simmer on low heat for about 20 minutes.
- 15. Toast the pine nuts in a pan without additional fat.
- 16. Add half of the basil strips to the soup.
- 17. Blend the soup until smooth.
- 18. Mix the remaining basil leaves in a bowl with sour cream.
- 19. Season the basil-cream mixture with salt and pepper.
- 20. Fill the soup into bowls.
- 21. Top the soup with the basil-cream mixture.
