  1. 1. Halve the onion and remove the skin.
  2. 2. Dice the onion finely.
  3. 3. Peel the potatoes.
  4. 4. Cut the potatoes into large cubes.
  5. 5. Wash the basil thoroughly.
  6. 6. Shake the basil dry.
  7. 7. Pluck the basil leaves from the stems.
  8. 8. Slice the basil leaves into thin strips.
  9. 9. Heat a pot with one tablespoon of oil.
  10. 10. Sauté the onions in it until translucent.
  11. 11. Add the potato cubes to the pot.
  12. 12. Pour the broth into the pot.
  13. 13. Season the soup with salt and pepper.
  14. 14. Let the soup simmer on low heat for about 20 minutes.
  15. 15. Toast the pine nuts in a pan without additional fat.
  16. 16. Add half of the basil strips to the soup.
