  1. 1. Cut the onion in half and peel it.
  2. 2. Dice the onion finely.
  3. 3. Peel the garlic.
  4. 4. Finely chop the garlic.
  5. 5. Wash the radicchio thoroughly.
  6. 6. Remove the outer leaves from the radicchio.
  7. 7. Slice the radicchio into strips.
  8. 8. Bring 5 liters of salted water to a boil in a large pot.
  9. 9. Heat oil in a pan over medium to high heat.
  10. 10. Add the onion and garlic to the pan.
  11. 11. Sauté the onion and garlic for about 2 minutes.
  12. 12. Add the black olives.
  13. 13. Sauté the olives for another 2 minutes.
  14. 14. Deglaze the pan with wine.
  15. 15. Add the cream.
  16. 16. Cover the pan and simmer the sauce for about 10 minutes.
  17. 17. Cook the fettuccine in the boiling salted water for about 9 minutes until al dente (firm to the bite).
  18. 18. Season the sauce with salt and pepper.
  19. 19. Drain the pasta.
  20. 20. Add the pasta and radicchio to the sauce.
  21. 21. Serve the fettuccine with black olives and radicchio on plates.
