🍰 Balsamic Ice Cream with Apricots

Ingredients
- Eggs 2 pcs.
- Whipping cream 350 g
- Icing sugar 125 g
- crème fraîche 200 g
- Balsamic vinegar, light 3 tsp
- Apricots, fresh 600 g
- Apple juice 100 ml
- Vanilla sugar 4 tsp
Instructions
- 1. Separate the eggs. Use the egg whites for something else.
- 2. Bring the cream to a boil in a pot.
- 3. Beat the egg yolks with powdered sugar for about 5 minutes using a hand mixer until foamy.
- 4. Bring about 500 ml of water to a boil in a pot.
- 5. Place the bowl with the egg yolks over the hot water (bain-marie).
- 6. Continue beating the egg yolk mixture for about 7 minutes until it thickens slightly.
- 7. Slowly pour the hot cream into the egg yolk mixture while stirring constantly.
- 8. Remove the bowl from the water bath.
- 9. Let the mixture cool down briefly and stir it occasionally.
- 10. Stir in the crème fraîche.
- 11. Season the mixture with balsamic vinegar.
- 12. Pour the balsamic mixture into a loaf pan lined with plastic wrap.
- 13. Let the parfait freeze for at least 6 hours or overnight in the freezer.
- 14. Wash the apricots.
- 15. Halve the apricots and remove the pits.
- 16. Cut the apricots into wedges.
- 17. Bring the apricots to a boil in a pot with apple juice and vanilla sugar.
- 18. Cook the apricots over low heat for about 5 minutes until soft.
- 19. Let the apricots cool down.
- 20. Turn out the balsamic parfait from the pan.
- 21. Remove the plastic wrap.
- 22. Slice the parfait.
- 23. Serve the parfait with the apricots.
