  1. 1. Wash the cucumber thoroughly under running water.
  2. 2. Cut the cucumber lengthwise into four strips.
  3. 3. Scrape out the seeds from the cucumber strips.
  4. 4. Grate the cucumber flesh coarsely.
  5. 5. Peel the garlic clove and chop it into fine pieces.
  6. 6. Put the yogurt, the grated cucumber, and half of the garlic into a bowl.
  7. 7. Mix the ingredients for the dip well together.
  8. 8. Season the dip with salt and pepper to taste.
  9. 9. Place the wooden skewers in a container with cold water.
  10. 10. Cut the onion in half.
  11. 11. Remove the skin from the onion.
  12. 12. Dice the onion into small cubes.
  13. 13. Wash the parsley and pat it dry.
  14. 14. Pluck the parsley leaves from the stems.
  15. 15. Chop the parsley leaves finely.
  16. 16. Put the onion cubes, the parsley, the remaining garlic, the ground meat, the paprika powder, and salt into a separate bowl.
  17. 17. Mix the meat mixture thoroughly with your hands or a spoon.
  18. 18. Divide the meat mixture into eight equal portions.
  19. 19. Shape each portion into an elongated oval.
  20. 20. Take the skewers out of the water and dry them.
  21. 21. Insert one skewer through each meat portion.
  22. 22. Lightly oil the grill grate or the pan.
  23. 23. Place the skewers on the hot grill or in the hot pan.
  24. 24. Grill the skewers over direct heat for about 15 minutes.
  25. 25. Fry the skewers in the pan over medium heat for about 5 to 6 minutes per side.
  26. 26. Turn the skewers once during the cooking time.
  27. 27. Serve the finished skewers together with the yogurt dip.
