🍽️ Crispy Baguette with Goat Cheese, Apricots, and Nuts

Ingredients
- Pine nuts 2 tbsp
- Oil 3.5 tbsp
- Mustard sauce 4 tbsp
- Honey 1 tbsp
- Balsamic vinegar, light 1 tsp
- Salt pinch
- Pepper, black ground pinch
- Apricots, fresh 8 pcs
- Arugula 75 g
- Baguette 1 pc
- Goat cheese roll 90 g
Instructions
- 1. Roughly chop the pine nuts.
- 2. Heat 1 teaspoon of oil in a frying pan over medium heat.
- 3. Fry the pine nuts for about 2 minutes until golden yellow.
- 4. Let the nuts drain on kitchen paper.
- 5. Leave the pan uncleaned.
- 6. Whisk 1 tablespoon of mustard sauce, honey, and vinegar in a bowl with a whisk.
- 7. Drizzle in 2 tablespoons of oil while stirring continuously.
- 8. Season the dressing with salt and pepper.
- 9. Add a little water if necessary to loosen the sauce.
- 10. Wash the apricots thoroughly.
- 11. Halve the apricots and remove the pits.
- 12. Cut the apricot halves into thin wedges.
- 13. Wash the arugula.
- 14. Shake the arugula dry.
- 15. Toss the apricots and arugula in the bowl with the dressing.
- 16. Slice the baguette diagonally into slices about 2 to 3 centimeters thick.
- 17. Heat 1 tablespoon of oil and 2 tablespoons of butter in a frying pan over medium heat.
- 18. Fry the baguette slices on all sides for about 3 minutes until golden brown.
- 19. Slice the goat cheese into thin slices.
- 20. Spread the remaining mustard sauce on the finished baguette slices.
- 21. Top the slices with cheese, apricots, and arugula.
- 22. Sprinkle the pine nuts over the top.
- 23. Serve the baguette immediately.
