  2. 2. Heat 1 teaspoon of oil in a frying pan over medium heat.
  3. 3. Fry the pine nuts for about 2 minutes until golden yellow.
  4. 4. Let the nuts drain on kitchen paper.
  5. 5. Leave the pan uncleaned.
  6. 6. Whisk 1 tablespoon of mustard sauce, honey, and vinegar in a bowl with a whisk.
  7. 7. Drizzle in 2 tablespoons of oil while stirring continuously.
  8. 8. Season the dressing with salt and pepper.
  9. 9. Add a little water if necessary to loosen the sauce.
  10. 10. Wash the apricots thoroughly.
  11. 11. Halve the apricots and remove the pits.
  12. 12. Cut the apricot halves into thin wedges.
  13. 13. Wash the arugula.
  14. 14. Shake the arugula dry.
  15. 15. Toss the apricots and arugula in the bowl with the dressing.
  16. 16. Slice the baguette diagonally into slices about 2 to 3 centimeters thick.
  17. 17. Heat 1 tablespoon of oil and 2 tablespoons of butter in a frying pan over medium heat.
  18. 18. Fry the baguette slices on all sides for about 3 minutes until golden brown.
  19. 19. Slice the goat cheese into thin slices.
  20. 20. Spread the remaining mustard sauce on the finished baguette slices.
  21. 21. Top the slices with cheese, apricots, and arugula.
  22. 22. Sprinkle the pine nuts over the top.
  23. 23. Serve the baguette immediately.
