  1. 1. Put the Emmental cheese into the mixing container.
  2. 2. Chop the cheese for 10 seconds on speed 7.
  3. 3. Transfer the grated cheese pieces into a separate bowl.
  4. 4. Add 330 grams of water and the yeast to the mixing container.
  5. 5. Warm the mixture for 2 minutes at 37 degrees Celsius and speed 1.
  6. 6. Add the flour and 1 teaspoon of salt.
  7. 7. Knead the dough for 2 minutes on the dough kneading setting.
  8. 8. Add the roasted onions, the grated Emmental, and the diced bacon to the dough.
  9. 9. Knead everything together for another 2 minutes on the dough kneading setting.
  10. 10. Take the dough out and place it on a lightly floured work surface.
  11. 11. Divide the dough into 3 equal pieces.
  12. 12. Knead each dough piece vigorously.
  13. 13. Shape the dough pieces into elongated loaves.
  14. 14. Cover the loaves with cling film or a damp kitchen towel.
  15. 15. Let the dough rise for approx. 20 minutes.
  16. 16. Preheat the oven to 230 degrees Celsius with top and bottom heat.
  17. 17. Score the loaves diagonally in the middle.
  18. 18. Bake the baguettes for approx. 20 to 25 minutes until golden brown.
  19. 19. Let the finished baguettes cool down in the oven or on the tray.
  20. 20. Slice the cooled baguettes.
