Ingredients
- water 580 g
- dry yeast 1 packet
- wheat flour, type 405 530 g
- salt 1 tsp
- oil for greasing 1 tsp
Instructions
- 1. Put 330 grams of water and the yeast into the mixing container.
- 2. Warm the mixture for 2 minutes at 37 degrees on setting 1.
- 3. Add 500 grams of flour and the salt.
- 4. Knead the dough for 2 minutes on the dough kneading setting.
- 5. Place the dough into a lightly oiled bowl.
- 6. Cover the bowl.
- 7. Let the dough rise for about 90 minutes.
- 8. Place the dough on a lightly floured work surface.
- 9. Divide the dough into 3 equal pieces.
- 10. Knead each piece of dough vigorously.
- 11. Shape the pieces into round loaves.
- 12. Cover the loaves with cling film or a damp cloth.
- 13. Let the loaves rise for about 20 minutes.
- 14. Gently press one piece of dough flat into a rectangle.
- 15. Roll the rectangle up tightly.
- 16. Stretch the roll under slight pressure into a baguette shape.
- 17. Place the baguettes seam-side down on a baking sheet lined with baking paper.
- 18. Push the baking paper together between the breads to create folds.
- 19. Cover the baguettes.
- 20. Let the baguettes rise for about 45 minutes.
- 21. Preheat the oven to 250 degrees top and bottom heat.
- 22. Place an empty baking sheet on the lowest rack.
- 23. Score the baguettes diagonally in the middle.
- 24. Place the baguettes on the middle rack in the oven.
- 25. Pour a cup of hot water into the bottom baking sheet.
- 26. Bake the baguettes for 20 to 25 minutes.
- 27. Let the baguettes cool down.
- 28. Slice the baguettes.
- 29. Serve the baguettes.
