  1. 1. Rinse the chicken meat under cold water and pat it completely dry with a kitchen towel.
  2. 2. Season the meat generously on all sides with salt, pepper, and paprika powder.
  3. 3. Heat some oil in a large frying pan over high heat.
  4. 4. Sear the chicken for about 4 minutes until it has a golden-brown color.
  5. 5. Deglaze the meat with vegetable broth and reduce the heat to low.
  6. 6. Let the chicken simmer covered for approx. 10 minutes.
  7. 7. Remove the chicken from the pan and let it cool completely.
  8. 8. Wash the celery stalks and slice them thinly.
  9. 9. Drain the pineapple in a sieve to collect the juice separately.
  10. 10. Halve the shallot, peel it, and dice it finely.
  11. 11. Cut the cooled chicken meat into small, bite-sized pieces.
  12. 12. Mix mayonnaise, yogurt, and 3 tablespoons of the pineapple juice in a large bowl.
  13. 13. Season the sauce to taste with lemon pepper and salt.
  14. 14. Add the cut chicken, celery, and shallot to the sauce and mix everything well.
  15. 15. Let the salad marinate for a few minutes so the flavors can blend.
  16. 16. Wash the arugula and let it drain well in a sieve.
  17. 17. Slice the bagels horizontally into two halves.
  18. 18. Toast the bagel halves lightly if desired.
  19. 19. Fill the bagels with the chicken salad and top with some arugula.
