🍽️ Crispy Chicken Bagels with Fresh Salad

Ingredients
- chicken breast fillets 600 g
- salt pinch
- pepper, black ground pinch
- paprika, sweet 1 tsp
- rapeseed oil 2 tbsp
- vegetable broth 200 ml
- celery stalks 0.5 pc
- pineapple pieces from can 200 g
- shallots 2 pc
- mayonnaise 2 tbsp
- yogurt, plain 150 g
- lemon pepper, ground pinch
- arugula 50 g
- bagels 4 pc
Instructions
- 1. Rinse the chicken meat under cold water and pat it completely dry with a kitchen towel.
- 2. Season the meat generously on all sides with salt, pepper, and paprika powder.
- 3. Heat some oil in a large frying pan over high heat.
- 4. Sear the chicken for about 4 minutes until it has a golden-brown color.
- 5. Deglaze the meat with vegetable broth and reduce the heat to low.
- 6. Let the chicken simmer covered for approx. 10 minutes.
- 7. Remove the chicken from the pan and let it cool completely.
- 8. Wash the celery stalks and slice them thinly.
- 9. Drain the pineapple in a sieve to collect the juice separately.
- 10. Halve the shallot, peel it, and dice it finely.
- 11. Cut the cooled chicken meat into small, bite-sized pieces.
- 12. Mix mayonnaise, yogurt, and 3 tablespoons of the pineapple juice in a large bowl.
- 13. Season the sauce to taste with lemon pepper and salt.
- 14. Add the cut chicken, celery, and shallot to the sauce and mix everything well.
- 15. Let the salad marinate for a few minutes so the flavors can blend.
- 16. Wash the arugula and let it drain well in a sieve.
- 17. Slice the bagels horizontally into two halves.
- 18. Toast the bagel halves lightly if desired.
- 19. Fill the bagels with the chicken salad and top with some arugula.
