🍳 Fresh Homemade Bagels

Ingredients
- water 300 ml
- brown sugar 2 tbsp
- yeast, fresh 0.5 pc
- wheat flour, type 405 500 g
- olive oil 2 tbsp
- salt 1 tbsp
- honey 3 tbsp
- sesame, white 1 tbsp
Instructions
- 1. Add lukewarm water, brown sugar, and crumbled yeast to a mixing bowl.
- 2. Heat the mixture with the measuring cup inserted for 3 minutes on speed 1 at 37 degrees Celsius.
- 3. Let the yeast mixture rest for about 10 minutes.
- 4. Add flour, olive oil, and 2 teaspoons of salt.
- 5. Knead the dough on the kneading setting for 2 minutes.
- 6. Take the dough out of the bowl and shape it into a ball.
- 7. Place the dough ball in a covered bowl.
- 8. Let the dough rise in a warm place for about 1 hour.
- 9. Knead the risen dough again briefly.
- 10. Divide the dough into 8 equal-sized balls.
- 11. Press a hole into the center of each ball using a spoon handle.
- 12. Gently twist the hole to create the characteristic bagel shape.
- 13. Place the bagels on a baking sheet lined with baking paper.
- 14. Make sure the bagels have enough space between them.
- 15. Let the bagels rest covered for about 10 minutes.
- 16. Bring about 3 liters of water to a boil in a pot.
- 17. Add honey and 1 teaspoon of salt to the boiling water.
- 18. Let the spices simmer briefly in the water.
- 19. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 20. Carefully place the bagels in batches into the hot water.
- 21. Simmer the bagels for about 45 seconds.
- 22. Turn the bagels over and cook them for another 45 seconds.
- 23. Remove the bagels with a slotted spoon.
- 24. Let the bagels drain briefly.
- 25. Place the bagels back onto the baking sheet.
- 26. Sprinkle sesame seeds over the bagels.
- 27. Bake the bagels in the oven for about 20 minutes.
