Ingredients
- milk 300 ml
- rolls 5 pcs
- onions, red 1 pcs
- wood sorrel 40 g
- salt pinch
- butter 2 tbsp
- eggs 3 pcs
- pepper, white ground pinch
- nutmeg, ground pinch
- breadcrumbs 5 tbsp
- South Tyrol bacon 100 g
- whipping cream 200 ml
- salad mix 200 g
- lemons 1 pcs
- mustard 1 tsp
- sugar 1 tsp
- olive oil 4 tbsp
Instructions
- 1. Bring the milk to a boil in a pot.
- 2. Cut the bread rolls into small cubes.
- 3. Place the bread cubes into a bowl.
- 4. Pour the hot milk over the bread cubes.
- 5. Let the bread soak in the milk for about 10 minutes.
- 6. Halve the onions and peel them.
- 7. Dice the onions finely.
- 8. Wash the wild garlic thoroughly.
- 9. Dry the wild garlic.
- 10. Chop the wild garlic finely.
- 11. Bring about 5 liters of salted water to a boil in a pot.
- 12. Heat the butter in a frying pan over medium heat.
- 13. Fry the onions in the butter for about 3 minutes.
- 14. Remove the onions from the heat once they are translucent.
- 15. Mix the soaked bread with the onions.
- 16. Add the chopped wild garlic to the bread mixture.
- 17. Add the eggs to the mixture.
- 18. Season the mixture with salt.
- 19. Season the mixture with pepper.
- 20. Season the mixture with grated nutmeg.
- 21. Add breadcrumbs until the dough is moldable.
- 22. Shape 8 dumplings from the mixture.
- 23. Place the dumplings into the boiling water.
- 24. Reduce the heat to a low setting.
- 25. Cook the dumplings covered for about 25 minutes.
- 26. Ensure the water does not boil vigorously.
- 27. Cut the bacon into small cubes.
- 28. Fry the bacon in a frying pan over high heat.
- 29. Fry the bacon for about 4 minutes until crispy.
- 30. Deglaze the bacon with cream.
- 31. Season the sauce with salt.
- 32. Season the sauce with pepper.
- 33. Wash the salad greens.
- 34. Spin the salad dry.
- 35. Halve the lemon.
- 36. Squeeze the juice from the lemon.
- 37. Put 2 tablespoons of lemon juice into a bowl.
- 38. Add mustard to the bowl.
- 39. Add sugar to the bowl.
- 40. Season the dressing with salt.
- 41. Season the dressing with pepper.
- 42. Add olive oil to the bowl.
- 43. Mix the dressing well.
- 44. Toss the salad with the dressing.
- 45. Remove the dumplings from the water.
- 46. Let the dumplings drain.
- 47. Serve the dumplings with the salad.
- 48. Serve the dumplings with the cream sauce.
