🍽️ Crispy Wild Garlic Gnocchi with Asparagus and Orange Dip

Ingredients
- Salt pinch
- green asparagus 2 bunch
- wild garlic 200 g
- oil 4 tbsp
- butter 3 tbsp
- gnocchi, fresh 800 g
- oranges 1 pc
- cream cheese, plain 25 g
- pepper, black ground pinch
Instructions
- 1. Fill a large pot with about 3 liters of water and add salt. Bring the water to a boil.
- 2. Peel the green asparagus and cut off the woody lower ends.
- 3. Wash the wild garlic thoroughly and pat it dry with a kitchen towel.
- 4. Put the wild garlic and 3 tablespoons of oil into a tall container. Puree the mixture with a hand blender until a smooth paste forms.
- 5. Put the prepared asparagus into the boiling salted water and cook it for about 3 minutes.
- 6. Remove the asparagus from the water and immediately place it in a bowl of cold water to stop the cooking process (shock).
- 7. Keep the asparagus cooking water in a container for later use.
- 8. Heat 2 tablespoons of butter and 1 tablespoon of oil in a large pan.
- 9. Fry the gnocchi in the pan for about 10 minutes until golden brown. Turn them occasionally while doing so.
- 10. Wash the orange thoroughly under running water.
- 11. Finely grate the peel of the orange (Make sure to use only the orange color, not the white pith).
- 12. Cut the orange in half and squeeze out the juice.
- 13. Heat 1 tablespoon of butter, the grated orange peel, the orange juice, and half a ladle of the asparagus cooking water in a second pan over high heat.
- 14. Add the cooled asparagus to the pan and simmer it in the sauce for about 3 minutes.
- 15. Add another half ladle of the asparagus cooking water and the cream cheese.
- 16. Season the sauce with salt and pepper to taste.
- 17. Distribute the fried gnocchi onto the plates.
- 18. Drizzle the prepared wild garlic puree evenly over the gnocchi.
- 19. Place the asparagus on top of the gnocchi.
- 20. Pour the orange cream cheese sauce over the dish.
- 21. Serve the wild garlic gnocchi with green asparagus and orange sauce immediately.
