🍳 Savory Wild Garlic Waffles with Smoked Salmon

Ingredients
- Mini cucumbers 3 pcs.
- Basil, fresh 25 g
- Wild garlic 25 g
- Butter 125 g
- Wheat flour, Type 405 350 g
- Eggs 4 pcs.
- Whipping cream 300 ml
- Sea salt pinch
- Pepper, white ground pinch
- Sunflower oil 2 tbsp
- Smoked salmon 200 g
- Parmesan 30 g
- Cress bed 1 bunch
Instructions
- 1. Wash the vegetables and herbs thoroughly and pat them dry.
- 2. Place soft butter, basil, and wild garlic into a bowl.
- 3. Blend the mixture with a hand blender until it is fine and homogeneous.
- 4. Add flour and baking powder and stir it in.
- 5. Stir the eggs into the batter one by one.
- 6. Add cream and stir it in until a thick batter forms.
- 7. Season the batter with salt and pepper.
- 8. Preheat the waffle iron and lightly grease it.
- 9. Place about two tablespoons of batter in the center of the waffle iron.
- 10. Spread the batter slightly and bake the waffle for two to three minutes until golden brown.
- 11. Repeat the process until you have baked about eight waffles.
- 12. Slice the cucumbers into thin rounds.
- 13. Coarsely grate the Parmesan cheese.
- 14. Top the waffles with smoked salmon, cucumber slices, grated Parmesan, and cress.
- 15. Plate the waffles and serve them.
- 16. Optional: Spread the waffles with grainy cream cheese and top with a boiled or poached egg.
