  1. 1. Wash the vegetables and herbs thoroughly and pat them dry.
  2. 2. Place soft butter, basil, and wild garlic into a bowl.
  3. 3. Blend the mixture with a hand blender until it is fine and homogeneous.
  4. 4. Add flour and baking powder and stir it in.
  5. 5. Stir the eggs into the batter one by one.
  6. 6. Add cream and stir it in until a thick batter forms.
  7. 7. Season the batter with salt and pepper.
  8. 8. Preheat the waffle iron and lightly grease it.
  9. 9. Place about two tablespoons of batter in the center of the waffle iron.
  10. 10. Spread the batter slightly and bake the waffle for two to three minutes until golden brown.
  11. 11. Repeat the process until you have baked about eight waffles.
  12. 12. Slice the cucumbers into thin rounds.
  13. 13. Coarsely grate the Parmesan cheese.
  14. 14. Top the waffles with smoked salmon, cucumber slices, grated Parmesan, and cress.
  15. 15. Plate the waffles and serve them.
  16. 16. Optional: Spread the waffles with grainy cream cheese and top with a boiled or poached egg.
