🍲 Wild Garlic Soup

Ingredients
- onions, yellow 1 pc.
- potatoes, mostly waxy 400 g
- butter 1 tbsp
- salt pinch
- pepper, black ground pinch
- white wine, dry 100 ml
- vegetable broth 1 L
- wild garlic 100 g
- lemons 1 pc.
- whipping cream 200 g
Instructions
- 1. Cut the onion in half, peel it and dice it. Wash the potatoes, peel them and also dice.
- 2. In a pot, heat the butter over high heat and sauté the onions for about 2 minutes. Add the potatoes, season with salt and pepper, and deglaze with white wine. Fill with vegetable broth and let it simmer covered for about 20 minutes.
- 3. Wash the wild garlic thoroughly and chop it roughly. Wash the lemon, cut it in half and squeeze out the juice. In a tall container, whip the 100 ml cream until stiff.
- 4. Add the wild garlic and the remaining cream to the soup and blend everything until smooth. Season with spices and lemon juice, and plate. Garnish with the whipped cream and serve. Enjoy your meal!
