🍽️ Flatbread with Wild Garlic and Pine Nuts

Ingredients
- water 180 ml
- yeast, fresh 0.5 pcs
- sugar 1 tsp
- wheat flour Type 550 500 g
- salt pinch
- olive oil 70 g
- wild garlic 50 g
- parmesan 40 g
- pine nuts 25 g
- pepper, black ground pinch
Instructions
- 1. Put water, yeast, and sugar into the mixing container.
- 2. Mix the ingredients for 2 minutes at speed 1 and 37 degrees Celsius.
- 3. Add flour, one teaspoon of salt, and 20 grams of olive oil.
- 4. Knead the dough for 2 minutes on the kneading setting until smooth.
- 5. Take the dough out of the container and form a ball.
- 6. Place the dough ball into a bowl.
- 7. Cover the bowl with a kitchen towel.
- 8. Let the dough rise in a warm place for about 1 hour.
- 9. Wait until the volume of the dough has doubled.
- 10. Wash the wild garlic thoroughly.
- 11. Shake the wild garlic dry.
- 12. Line a loaf pan with baking paper.
- 13. Cut the Parmesan into small pieces.
- 14. Put the Parmesan into the mixing container.
- 15. Insert the measuring cup.
- 16. Crush the Parmesan for 10 seconds at speed 10.
- 17. Add the wild garlic, pine nuts, salt, and pepper.
- 18. Crush the mixture for 20 seconds at speed 8.
- 19. Push the mixture down from the wall with a spatula.
- 20. Add 50 grams of oil.
- 21. Mix everything for 20 seconds at speed 5.
- 22. Pour the wild garlic pesto mixture into a bowl.
- 23. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 24. Lightly dust the work surface with flour.
- 25. Roll the dough out into a rectangle measuring 45 by 30 centimeters.
- 26. Spread the pesto evenly over the dough.
- 27. Cut the dough into three long strips.
- 28. Fold the strips like an accordion.
- 29. Stack the folded squares on top of each other.
- 30. Place the stack with the cut side down into a greased loaf pan.
- 31. Bake the bread for about 30 minutes until golden brown in the oven.
- 32. Let the bread cool down slightly.
- 33. Serve the bread and enjoy your meal.
