🍰 Crunchy Chocolate Bear Paws

Ingredients
- Chocolate, dark 250 g
- Almonds, ground 150 g
- Starch 1 tbsp
- Cocoa powder 1 tbsp
- Cinnamon 0.25 tsp
- Eggs 2 pcs
- Salt pinch
- Sugar 4 tbsp
Instructions
- 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 2. Finely chop 150 grams of chocolate.
- 3. Add almonds, the chopped chocolate, starch, cocoa, and cinnamon to a bowl.
- 4. Mix the dry ingredients thoroughly together.
- 5. Separate the eggs and save the yolks for another use.
- 6. Place the egg whites and a pinch of salt into a clean bowl.
- 7. Beat the egg whites stiff using a hand mixer.
- 8. Slowly stir in 2 tablespoons of sugar while beating.
- 9. Continue beating until the egg whites are firm and glossy.
- 10. Gently fold the chocolate-almond mixture into the egg whites.
- 11. Pour 2 tablespoons of sugar into a deep plate.
- 12. Wet your hands with cold water.
- 13. Take small portions of the dough.
- 14. Shape them into round balls with a diameter of about 3 centimeters.
- 15. Roll the balls in the sugar on the plate.
- 16. Place the balls on a baking sheet lined with baking paper.
- 17. Gently flatten the balls slightly with a fork.
- 18. Bake the cookies in the oven for 12 to 14 minutes.
- 19. Remove the cookies when they are crunchy.
- 20. Let the cookies cool down completely.
- 21. Finely chop the remaining chocolate.
- 22. Bring water to a boil in a pot.
- 23. Place a bowl with the chocolate over the hot water.
- 24. Melt the chocolate in the hot water bath.
- 25. Let the melted chocolate cool down briefly.
- 26. Dip the bear paws halfway into the chocolate.
- 27. Place the dipped cookies on baking paper.
- 28. Let the chocolate dry in the air.
