  2. 2. Finely chop 150 grams of chocolate.
  3. 3. Add almonds, the chopped chocolate, starch, cocoa, and cinnamon to a bowl.
  4. 4. Mix the dry ingredients thoroughly together.
  5. 5. Separate the eggs and save the yolks for another use.
  6. 6. Place the egg whites and a pinch of salt into a clean bowl.
  7. 7. Beat the egg whites stiff using a hand mixer.
  8. 8. Slowly stir in 2 tablespoons of sugar while beating.
  9. 9. Continue beating until the egg whites are firm and glossy.
  10. 10. Gently fold the chocolate-almond mixture into the egg whites.
  11. 11. Pour 2 tablespoons of sugar into a deep plate.
  12. 12. Wet your hands with cold water.
  13. 13. Take small portions of the dough.
  14. 14. Shape them into round balls with a diameter of about 3 centimeters.
  15. 15. Roll the balls in the sugar on the plate.
  16. 16. Place the balls on a baking sheet lined with baking paper.
  17. 17. Gently flatten the balls slightly with a fork.
  18. 18. Bake the cookies in the oven for 12 to 14 minutes.
  19. 19. Remove the cookies when they are crunchy.
  20. 20. Let the cookies cool down completely.
