  1. 1. Preheat the oven to 250 degrees Celsius with fan.
  2. 2. Wash the potatoes thoroughly.
  3. 3. Poke the skin all around with a fork.
  4. 4. Cut the potatoes in half.
  5. 5. Rub the halves with oil and salt.
  6. 6. Wrap each half individually in aluminum foil.
  7. 7. Place the foil packs on a baking sheet.
  8. 8. Bake the potatoes in the oven for 20 to 25 minutes.
  9. 9. Halve the shallot and peel it.
  10. 10. Dice the shallot finely.
  11. 11. Wash the apples and peel them.
  12. 12. Grate the apples coarsely.
  13. 13. Warm 2 tablespoons of butter in a pot over low to medium heat.
  14. 14. Add the shallots and the apple shreds to the pot.
  15. 15. Sweat the ingredients for about 2 minutes.
  16. 16. Drain the sauerkraut.
  17. 17. Sprinkle the apple mixture with sugar.
  18. 18. Add the sauerkraut to the apple mixture.
  19. 19. Stew everything while stirring for 10 minutes over low heat.
  20. 20. Remove the pot from the heat.
  21. 21. Stir in the sour cream.
  22. 22. Season the mixture generously with salt and pepper.
  23. 23. Set aside the apple sauerkraut mixture.
  24. 24. Melt 2 tablespoons of butter in a pan over medium heat.
  25. 25. Toast the breadcrumbs until golden brown for 2 to 3 minutes.
  26. 26. Lightly salt the crumbs.
  27. 27. Let the crumbs drain on kitchen paper.
  28. 28. Wash the parsley and shake it dry.
  29. 29. Pluck the parsley leaves from the stems.
  30. 30. Finely chop the parsley leaves.
  31. 31. Mix the parsley with the breadcrumbs in a bowl.
  32. 32. Season the crumb mixture with salt.
  33. 33. Remove the baking sheet from the oven.
  34. 34. Carefully remove the potatoes from the foil.
  35. 35. Fluff the inside of the potatoes with a fork.
  36. 36. Place the potato halves on plates.
  37. 37. Distribute 2 tablespoons of butter on the potatoes.
  38. 38. Add cheese on top.
  39. 39. Let the butter and cheese melt.
  40. 40. Salt the potatoes.
  41. 41. Place the apple sauerkraut on the potatoes.
  42. 42. Sprinkle everything with the parsley crumbs.
