🍽️ Oven Potatoes with Creamy Apple Sauerkraut and Parsley Crust

Ingredients
- potatoes, mainly waxy 1 kg
- oil 2 tbsp
- salt pinch
- shallots 1 pc.
- apples, red 2 pc.
- butter 6 tbsp
- sauerkraut 500 g
- sugar 1 tsp
- sour cream 200 g
- pepper, black ground pinch
- breadcrumbs 50 g
- parsley, fresh 25 g
- Gouda, grated 50 g
Instructions
- 1. Preheat the oven to 250 degrees Celsius with fan.
- 2. Wash the potatoes thoroughly.
- 3. Poke the skin all around with a fork.
- 4. Cut the potatoes in half.
- 5. Rub the halves with oil and salt.
- 6. Wrap each half individually in aluminum foil.
- 7. Place the foil packs on a baking sheet.
- 8. Bake the potatoes in the oven for 20 to 25 minutes.
- 9. Halve the shallot and peel it.
- 10. Dice the shallot finely.
- 11. Wash the apples and peel them.
- 12. Grate the apples coarsely.
- 13. Warm 2 tablespoons of butter in a pot over low to medium heat.
- 14. Add the shallots and the apple shreds to the pot.
- 15. Sweat the ingredients for about 2 minutes.
- 16. Drain the sauerkraut.
- 17. Sprinkle the apple mixture with sugar.
- 18. Add the sauerkraut to the apple mixture.
- 19. Stew everything while stirring for 10 minutes over low heat.
- 20. Remove the pot from the heat.
- 21. Stir in the sour cream.
- 22. Season the mixture generously with salt and pepper.
- 23. Set aside the apple sauerkraut mixture.
- 24. Melt 2 tablespoons of butter in a pan over medium heat.
- 25. Toast the breadcrumbs until golden brown for 2 to 3 minutes.
- 26. Lightly salt the crumbs.
- 27. Let the crumbs drain on kitchen paper.
- 28. Wash the parsley and shake it dry.
- 29. Pluck the parsley leaves from the stems.
- 30. Finely chop the parsley leaves.
- 31. Mix the parsley with the breadcrumbs in a bowl.
- 32. Season the crumb mixture with salt.
- 33. Remove the baking sheet from the oven.
- 34. Carefully remove the potatoes from the foil.
- 35. Fluff the inside of the potatoes with a fork.
- 36. Place the potato halves on plates.
- 37. Distribute 2 tablespoons of butter on the potatoes.
- 38. Add cheese on top.
- 39. Let the butter and cheese melt.
- 40. Salt the potatoes.
- 41. Place the apple sauerkraut on the potatoes.
- 42. Sprinkle everything with the parsley crumbs.
