  1. 1. Preheat your oven to 220 degrees Celsius with top and bottom heat.
  2. 2. Wash the potatoes thoroughly.
  3. 3. Cut the potatoes in half.
  4. 4. Place the potato halves in a large bowl.
  5. 5. Add 2 tablespoons of oil and some salt.
  6. 6. Mix everything well so the potatoes are evenly coated.
  7. 7. Place the potato halves cut-side down on a baking sheet.
  8. 8. Bake the potatoes in the oven for about 20 minutes.
  9. 9. Set the empty bowl aside and clean it.
  10. 10. Wash the oranges under running water.
  11. 11. Finely grate the peel of one orange.
  12. 12. Halve this orange and squeeze out the juice.
  13. 13. Peel the second orange completely with a sharp knife.
  14. 14. Remove the white pith under the peel as well.
  15. 15. Carefully cut the segments out of the orange.
  16. 16. Catch the escaping juice in a bowl.
  17. 17. Pour the squeezed orange juice into a pot.
  18. 18. Heat the juice on high heat.
  19. 19. Add cumin and chili.
  20. 20. Let the mixture simmer for about 5 minutes.
  21. 21. Reduce the juice to half its volume.
  22. 22. Remove the pot from the heat.
  23. 23. Stir 1 tablespoon of honey into the warm liquid.
  24. 24. Add 2 to 3 tablespoons of oil.
  25. 25. Whisk the mixture vigorously with a whisk.
  26. 26. Season the dressing with salt, pepper, and sugar.
  27. 27. Let the dressing cool down completely.
  28. 28. Chop the cashew nuts coarsely.
  29. 29. Heat 1 teaspoon of oil in a frying pan.
  30. 30. Set the heat to medium-high.
  31. 31. Add the cashew nuts to the pan.
  32. 32. Sprinkle a pinch of salt and a pinch of sugar over them.
  33. 33. Roast the nuts for about 2 minutes.
  34. 34. Remove the pan from the heat as soon as the nuts are golden brown.
  35. 35. Wash the lamb's lettuce thoroughly.
  36. 36. Dry the lettuce in a sieve or with a salad spinner.
  37. 37. Take the potatoes out of the oven after 20 minutes.
  38. 38. Press the potato halves flat with a fork.
  39. 39. Generously sprinkle the potatoes with Gouda cheese.
  40. 40. Put the potatoes back in the oven for another 6 to 8 minutes.
  41. 41. Gratin the cheese until it melts and turns golden brown.
  42. 42. Serve the hot potatoes on plates.
  43. 43. Add the fresh lamb's lettuce.
  44. 44. Drizzle the cooled dressing over the dish.
  45. 45. Distribute the orange segments on top.
  46. 46. Sprinkle the orange zest over it.
  47. 47. Add the roasted cashew nuts as a topping.
