🍽️ Oven Potatoes with Lamb's Lettuce, Orange Dressing and Cashew Crunch

Ingredients
- potatoes, mainly waxy 1 kg
- oil 4.5 tbsp
- salt 1 tbsp
- oranges 2 pcs.
- cumin 0.5 tsp
- chili, ground 0.25 tsp
- honey 1 tbsp
- pepper, black ground pinch
- sugar pinch
- cashew nuts 40 g
- corn salad 75 g
- Gouda, grated 200 g
Instructions
- 1. Preheat your oven to 220 degrees Celsius with top and bottom heat.
- 2. Wash the potatoes thoroughly.
- 3. Cut the potatoes in half.
- 4. Place the potato halves in a large bowl.
- 5. Add 2 tablespoons of oil and some salt.
- 6. Mix everything well so the potatoes are evenly coated.
- 7. Place the potato halves cut-side down on a baking sheet.
- 8. Bake the potatoes in the oven for about 20 minutes.
- 9. Set the empty bowl aside and clean it.
- 10. Wash the oranges under running water.
- 11. Finely grate the peel of one orange.
- 12. Halve this orange and squeeze out the juice.
- 13. Peel the second orange completely with a sharp knife.
- 14. Remove the white pith under the peel as well.
- 15. Carefully cut the segments out of the orange.
- 16. Catch the escaping juice in a bowl.
- 17. Pour the squeezed orange juice into a pot.
- 18. Heat the juice on high heat.
- 19. Add cumin and chili.
- 20. Let the mixture simmer for about 5 minutes.
- 21. Reduce the juice to half its volume.
- 22. Remove the pot from the heat.
- 23. Stir 1 tablespoon of honey into the warm liquid.
- 24. Add 2 to 3 tablespoons of oil.
- 25. Whisk the mixture vigorously with a whisk.
- 26. Season the dressing with salt, pepper, and sugar.
- 27. Let the dressing cool down completely.
- 28. Chop the cashew nuts coarsely.
- 29. Heat 1 teaspoon of oil in a frying pan.
- 30. Set the heat to medium-high.
- 31. Add the cashew nuts to the pan.
- 32. Sprinkle a pinch of salt and a pinch of sugar over them.
- 33. Roast the nuts for about 2 minutes.
- 34. Remove the pan from the heat as soon as the nuts are golden brown.
- 35. Wash the lamb's lettuce thoroughly.
- 36. Dry the lettuce in a sieve or with a salad spinner.
- 37. Take the potatoes out of the oven after 20 minutes.
- 38. Press the potato halves flat with a fork.
- 39. Generously sprinkle the potatoes with Gouda cheese.
- 40. Put the potatoes back in the oven for another 6 to 8 minutes.
- 41. Gratin the cheese until it melts and turns golden brown.
- 42. Serve the hot potatoes on plates.
- 43. Add the fresh lamb's lettuce.
- 44. Drizzle the cooled dressing over the dish.
- 45. Distribute the orange segments on top.
- 46. Sprinkle the orange zest over it.
- 47. Add the roasted cashew nuts as a topping.
