🍽️ Fried Fish with Pea Puree

Ingredients
- cod, frozen 600 g
- onions, yellow 1 pc.
- thyme, fresh 10 g
- butter 2 tbsp
- peas, frozen 1 kg
- vegetable broth 500 ml
- cornstarch 100 g
- baking powder 1 tsp
- salt pinch
- beer 200 ml
- wheat flour, Type 405 100 g
- frying oil 500 ml
- pepper, black ground pinch
- sour cream 2 tbsp
Instructions
- 1. Best let the fish thaw overnight in the refrigerator. Halve the onions, peel them, and chop them finely. Wash the thyme thoroughly, shake it dry, and strip the leaves from the stems.
- 2. In a pot, melt the butter over high heat and sauté the onions in it for about 2 minutes until translucent. Add the thyme leaves and frozen peas and sauté for another approx. 1 minute. Deglaze with broth and cook covered for about 10 minutes.
- 3. In a bowl, mix the flour, baking powder, salt, and beer to form a batter. Spread flour on a plate. Pour the oil into a pot to a height of about 4–6 cm and heat over high heat until small bubbles rise when a wooden spoon is held in it.
- 4. Rinse the fish, pat it dry with kitchen paper, and cut it into pieces about 4 cm in size. Lightly salt and pepper. Coat in flour, shake off excess flour, dip into the beer batter, and fry in portions in the hot oil for approx. 4–6 minutes until golden brown. Let it drain well on kitchen paper.
- 5. Puree the peas in the pot. Stir in the sour cream and season to taste. Serve together with the fried fish. Enjoy your meal! Tip: [recipeLink=150335] goes well with this.
