  1. 1. Peel the beetroot and cut it into small cubes. Wash the cauliflower thoroughly and break or cut it into small florets. Peel, wash, and cube the potatoes.
  2. 2. In a pot, bring the beetroot, cauliflower, and potatoes to a boil covered with water, then simmer on low heat for about 15 minutes.
  3. 3. After cooking, drain everything and save the cooking water. In the pot, finely puree the vegetables with oil and 2–3 tablespoons of the cooking water. Transfer the beetroot-potato-cauliflower puree to a bowl, let it cool, and serve.
