  1. 1. Roughly chop the cashew nuts.
  2. 2. Roast the cashew nuts in a pot without added fat over medium heat for about 5 minutes.
  3. 3. Place the coconut oil in a warm water bath until it becomes liquid.
  4. 4. Wash the mint and shake it dry.
  5. 5. Pick the mint leaves off the stems.
  6. 6. Halve the avocados and remove the pits.
  7. 7. Carefully scoop the flesh out of the skin with a spoon.
  8. 8. Put the avocado, cocoa powder, agave syrup, and liquid coconut oil into a bowl.
  9. 9. Blend the ingredients with a hand blender until you have a smooth mixture.
  10. 10. Fill the mousse into small jars.
  11. 11. Garnish the mousse with the roasted cashew nuts and mint leaves.
  12. 12. Place the jars in the fridge until serving.
