  1. 1. Thoroughly wash the arugula under running water.
  2. 2. Shake the greens dry.
  3. 3. Halve the avocado and remove the pit.
  4. 4. Scoop the flesh out of the skin with a spoon.
  5. 5. Slice the fruit into thin slices.
  6. 6. Heat a non-stick pan over low to medium heat.
  7. 7. Place a plain wrap into the hot pan.
  8. 8. Toast the wrap for about 1 minute.
  9. 9. Flip the wrap once it shows light brown spots.
  10. 10. Sprinkle some cheese over the surface.
  11. 11. Toast the wrap for another approx. 1 minute.
  12. 12. Spread 2 tbsp of crème fraîche onto the wrap.
  13. 13. Season the crème fraîche with salt and pepper.
  14. 14. Top the wrap with some of the avocado slices.
  15. 15. Distribute ham cubes over the wrap.
  16. 16. Sprinkle a little more cheese over the toppings.
  17. 17. Place a second wrap on top of the filling.
  18. 18. Flip the quesadilla in the pan.
  19. 19. Toast the new side for approx. 2 minutes.
  20. 20. Remove the finished quesadilla from the pan.
  21. 21. Repeat the process for the remaining quesadillas.
  22. 22. Plate the quesadillas.
  23. 23. Garnish them with the prepared arugula.
  24. 24. Serve the quesadillas immediately.
