  1. 1. Peel the oranges thoroughly with a sharp knife so that the white pith is completely removed. Cut out the fruit segments from the membranes with V-shaped cuts and catch the juice.
  2. 2. Wash the arugula thoroughly and drain. Halve the avocado, remove the pit, loosen the flesh from the skin and cut into cubes. Coarsely chop the peanuts.
  3. 3. In a bowl, mix the olive oil with mustard, 3 tbsp of the collected orange juice, salt and pepper well. Then fold in the orange segments, arugula, avocado and peanuts into the dressing and serve. Enjoy your meal!
