  1. 1. Bring about 5 liters of salted water to a boil in a large pot.
  2. 2. Halve the shallots, peel them, and chop them finely.
  3. 3. Cut the raisins into small pieces.
  4. 4. Halve the lime and squeeze out the juice.
  5. 5. Wash the arugula thoroughly and spin it dry.
  6. 6. Tear the arugula into coarse pieces.
  7. 7. Halve the avocados and remove the pits.
  8. 8. Scoop out the avocado flesh with a spoon.
  9. 9. Mix the chopped shallots and raisins in a bowl with balsamic vinegar.
  10. 10. Season the shallot and raisin mixture with salt and sugar, then set it aside.
  11. 11. Place the avocado, half of the arugula, the feta cheese, 2 tablespoons of lime juice, and 3 tablespoons of olive oil into a tall container.
  12. 12. Blend the ingredients with an immersion blender until you have a fine, smooth mixture.
  13. 13. Season the avocado cream to taste with salt and pepper.
  14. 14. Cook the spaghetti in the boiling salted water for about 5 minutes until al dente.
  15. 15. Drain the pasta and save one cup of the cooking water.
  16. 16. Thoroughly mix the drained pasta and the avocado cream in the pot.
  17. 17. Add some of the saved pasta water as needed to achieve your desired consistency.
  18. 18. Finally, season the pasta with salt and pepper to taste.
  19. 19. Plate the spaghetti.
  20. 20. Garnish the dishes with the remaining arugula.
  21. 21. Sprinkle the pasta with the shallot and raisin mixture.
  22. 22. Serve the dish immediately and enjoy your meal.
