🍝 Spaghetti with creamy avocado feta sauce, arugula and raisins

Ingredients
- Salt pinch
- Shallots 2 pcs.
- Raisins 50 g
- Limes 1 pcs.
- Arugula 100 g
- Avocado 2 pcs.
- Balsamic vinegar, light 2 tbsp
- Sugar pinch
- Feta cheese 300 g
- Olive oil 3 tbsp
- Pepper, black ground pinch
- Spaghetti 500 g
Instructions
- 1. Bring about 5 liters of salted water to a boil in a large pot.
- 2. Halve the shallots, peel them, and chop them finely.
- 3. Cut the raisins into small pieces.
- 4. Halve the lime and squeeze out the juice.
- 5. Wash the arugula thoroughly and spin it dry.
- 6. Tear the arugula into coarse pieces.
- 7. Halve the avocados and remove the pits.
- 8. Scoop out the avocado flesh with a spoon.
- 9. Mix the chopped shallots and raisins in a bowl with balsamic vinegar.
- 10. Season the shallot and raisin mixture with salt and sugar, then set it aside.
- 11. Place the avocado, half of the arugula, the feta cheese, 2 tablespoons of lime juice, and 3 tablespoons of olive oil into a tall container.
- 12. Blend the ingredients with an immersion blender until you have a fine, smooth mixture.
- 13. Season the avocado cream to taste with salt and pepper.
- 14. Cook the spaghetti in the boiling salted water for about 5 minutes until al dente.
- 15. Drain the pasta and save one cup of the cooking water.
- 16. Thoroughly mix the drained pasta and the avocado cream in the pot.
- 17. Add some of the saved pasta water as needed to achieve your desired consistency.
- 18. Finally, season the pasta with salt and pepper to taste.
- 19. Plate the spaghetti.
- 20. Garnish the dishes with the remaining arugula.
- 21. Sprinkle the pasta with the shallot and raisin mixture.
- 22. Serve the dish immediately and enjoy your meal.
