🍽️ Grilled Shrimp and Avocado Skewers with Fresh Tomato Bruschetta

Ingredients
- Organic lemons 1 pc.
- Garlic cloves 3 pc.
- Basil, fresh 30 g
- Parsley, fresh 1 bunch
- Avocado 2 pc.
- Olive oil 3 tbsp
- Salt pinch
- Pepper, black ground pinch
- Party shrimp 350 g
- Baguette 1 pc.
- Vine tomatoes 2 pc.
- Balsamic vinegar, dark 2 tbsp
Instructions
- 1. Thoroughly wash the lemon under running water.
- 2. Finely grate the zest from half a lemon.
- 3. Squeeze the juice from the lemon.
- 4. Peel two garlic cloves.
- 5. Finely chop the garlic.
- 6. Wash the basil and the parsley.
- 7. Dry the herbs thoroughly.
- 8. Pluck the leaves off the stems.
- 9. Finely chop the herbs.
- 10. Cut the avocado in half.
- 11. Remove the pit from the avocado.
- 12. Scoop out the flesh from the skin.
- 13. Cut the avocado flesh into small cubes.
- 14. Drizzle the avocado cubes with some lemon juice.
- 15. Put one tablespoon of olive oil into a bowl.
- 16. Add the grated lemon zest to the bowl.
- 17. Add one tablespoon of lemon juice to the bowl.
- 18. Add the chopped garlic to the bowl.
- 19. Add the chopped parsley to the bowl.
- 20. Season the marinade with salt and pepper.
- 21. Mix all marinade ingredients well.
- 22. Rinse the shrimp.
- 23. Pat the shrimp dry.
- 24. Let the shrimp marinate for about 15 minutes.
- 25. Preheat the grill.
- 26. Cut the baguette into slices about two centimeters thick.
- 27. Peel the last garlic clove.
- 28. Halve the garlic clove.
- 29. Toast the baguette slices on the grill for about five to six minutes.
- 30. Rub the grilled slices with the garlic half.
- 31. Wash the tomatoes.
- 32. Halve the tomatoes.
- 33. Remove the core from the tomatoes.
- 34. Cut the tomatoes into cubes.
- 35. Put the tomato cubes into a bowl.
- 36. Add two tablespoons of olive oil to the tomatoes.
- 37. Add balsamic vinegar to the tomatoes.
- 38. Add the chopped basil to the tomatoes.
- 39. Add the chopped parsley to the tomatoes.
- 40. Season the tomato mixture with salt and pepper.
- 41. Mix the tomato mixture well.
- 42. Thread the shrimp and avocado alternately onto skewers.
- 43. Brush the skewers with some oil.
- 44. Place the skewers on the grill.
- 45. Grill each side of the skewers for about two minutes.
- 46. Top the baguette slices with the tomato mixture.
- 47. Serve the bruschetta together with the grilled skewers.
