🥗 Avocado-Pineapple Salad with Peanut Dressing

Ingredients
- Pineapple 1 pc.
- Spring onions 0.5 bunch
- Sweet pepper 1 pc.
- Peanuts, roasted and salted 60 g
- Organic limes 1 pc.
- Honey 3 tsp
- Rapeseed oil 4 tbsp
- Salt pinch
- Arugula 100 g
- Avocado 2 pc.
Instructions
- 1. Peel the pineapple and cut it into quarters.
- 2. Remove the hard core from the pineapple pieces.
- 3. Slice the pineapple flesh into thin slices.
- 4. Clean the spring onions and chop them finely.
- 5. Wash the bell pepper thoroughly.
- 6. Remove the stem and seeds from the bell pepper.
- 7. Cut the bell pepper into small cubes.
- 8. Roughly crush the peanuts.
- 9. Cut a lime in half.
- 10. Squeeze the juice from the lime.
- 11. Add the bell pepper cubes, spring onions, lime juice, honey, and oil to a bowl.
- 12. Mix the dressing ingredients well together.
- 13. Season the dressing with salt to taste.
- 14. Wash the arugula.
- 15. Spin the arugula dry in a salad spinner.
- 16. Cut the avocados in half.
- 17. Remove the pits from the avocado halves.
- 18. Peel the flesh of the avocados.
- 19. Cut the avocado flesh into wedges.
- 20. Place the arugula on the plates.
- 21. Distribute the pineapple slices on the arugula.
- 22. Place the avocado wedges on the salad.
- 23. Drizzle the dressing evenly over the salad.
- 24. Sprinkle the roughly crushed peanuts over the top.
