  1. 1. Place the oysters with the bulging side on a kitchen towel.
  2. 2. Position the oyster knife at the small opening on the pointed end of the oyster.
  3. 3. Make a jiggling motion along the side of the oyster.
  4. 4. Open the oyster using a lever motion with the knife by lifting the top shell. Remove any small shell fragments with the knife. Detach the oyster meat from the shell by sliding the knife underneath.
