🍽️ Oysters with Shallot Vinaigrette

Ingredients
- Shallots 3 pcs
- Raspberry vinegar 4 tbsp
- Olive oil 2 tbsp
- Organic limes 0.5 pcs
- Sea salt pinch
- Oysters 12 pcs
- Crushed Ice 300 g
Instructions
- 1. Peel the shallots and cut them into very small cubes.
- 2. Place the shallot cubes into a small bowl.
- 3. Add the raspberry vinegar, olive oil, and a splash of lime juice.
- 4. Season the mixture with a pinch of salt and freshly ground pepper.
- 5. Mix all ingredients well together.
- 6. Let the vinaigrette stand for about 15 minutes to let the flavors meld.
- 7. Scrub the oysters clean under running cold water.
- 8. Place an oyster on a kitchen towel with the rounded side facing down.
- 9. Put on a protective glove and take an oyster knife.
- 10. Carefully insert the tip of the knife at the pointed hinge side.
- 11. Slide the knife along the inside edge to sever the adductor muscle.
- 12. Lift off the top shell of the oyster.
- 13. Remove any remaining shell fragments.
- 14. Carefully pour off the initial oyster liquor.
- 15. Place the oysters securely on crushed ice or coarse sea salt.
- 16. Drizzle each oyster with about 1 to 2 teaspoons of the shallot vinaigrette.
- 17. Add an extra drop of olive oil on top if desired.
- 18. Serve the oysters immediately while ice cold.
