🍽️ Fruity Asian Shrimp Salad with Pomelo

Ingredients
- Pomelo 0.5 pc.
- Oranges 2 pc.
- Garlic cloves 1 pc.
- Spring onions 1 bunch
- Cilantro, fresh 10 g
- Mint, fresh 10 g
- Organic Limes 1 pc.
- Oil 4 tbsp
- Soy sauce 2 tbsp
- Pepper, black ground pinch
- Peanuts 50 g
- Shrimp cooked, frozen 250 g
Instructions
- 1. Peel the pomelo and pull the flesh into bite-sized pieces.
- 2. Peel the oranges and cut them into pieces.
- 3. Peel the garlic and chop it roughly.
- 4. Wash the spring onions, trim the ends, and slice them into thin rings.
- 5. Wash the cilantro and mint, shake off excess water, and remove the thick stems.
- 6. Roughly chop the herbs.
- 7. Halve the lime and squeeze out the juice.
- 8. In a bowl, whisk together 2 tablespoons of lime juice, the chopped mint, cilantro, 2 tablespoons of oil, soy sauce, and pepper.
- 9. Roughly chop the peanuts.
- 10. Heat a pan over medium heat.
- 11. Roast the peanuts in the pan for about 2 minutes.
- 12. Let the peanuts cool on a plate.
- 13. Heat 2 tablespoons of oil in a clean pan over medium heat.
- 14. Sauté the shrimp with the garlic in the pan for about 4 minutes.
- 15. Mix the shrimp, citrus fruits, herbs, and spring onions with the dressing.
- 16. Plate the salad.
- 17. Sprinkle the roasted peanuts over the salad and serve.
