🍽️ Sweet and sour noodles with Asian vegetables

Ingredients
- Salt pinch
- Spaghetti 500 g
- Oil 5 tbsp
- Pineapple pieces from the can 100 g
- Tomato paste 1 tbsp
- Vinegar 1 tbsp
- Cornstarch 1 tbsp
- Carrots 2 pcs.
- Pak Choi 2 pcs.
- Leek 1 pcs.
- Tofu, plain 200 g
- Curry powder 1 tsp
- Soy sauce 7 tbsp
Instructions
- 1. Bring 5 liters of water with salt to a boil in a pot.
- 2. Cook the spaghetti in it for about 8 minutes until al dente.
- 3. Drain the spaghetti in a colander.
- 4. Return the noodles to the pot.
- 5. Mix the noodles with 2 tablespoons of oil.
- 6. Set the noodles aside.
- 7. Drain the canned pineapple into a colander.
- 8. Collect the pineapple liquid.
- 9. Mix 200 milliliters of the pineapple liquid with 200 milliliters of water in a pot.
- 10. Add tomato paste, vinegar, and cornstarch to the liquid.
- 11. Stir the mixture with a whisk.
- 12. Bring the sauce to a boil while stirring.
- 13. Continue cooking the sauce until it becomes creamy.
- 14. Remove the pot from the heat.
- 15. Stir 100 grams of pineapple chunks into the sauce.
- 16. Season the sauce with salt.
- 17. Set the sauce aside.
- 18. Peel the carrots.
- 19. Remove the ends of the carrots.
- 20. Cut the carrots into thin strips.
- 21. Wash the pak choi.
- 22. Separate the green and white parts of the pak choi from each other.
- 23. Cut the green parts of the pak choi into strips.
- 24. Cut the white parts of the pak choi into strips.
- 25. Halve the leek lengthwise.
- 26. Cut the leek into thin strips.
- 27. Rinse the leek in a colander.
- 28. Crumble the tofu in a bowl.
- 29. Season the tofu with curry powder.
- 30. Heat 3 tablespoons of oil in a wok or a large frying pan on high heat.
- 31. Fry the tofu, carrots, white parts of the pak choi, and leek in it for about 3 minutes on high heat.
- 32. Add the spaghetti.
- 33. Fry everything for about 5 minutes.
- 34. Shake the pan occasionally.
- 35. Deglaze the pan with soy sauce.
- 36. Continue to shake the pan.
- 37. Continue cooking until the liquid has evaporated.
- 38. Fold in the green parts of the pak choi.
- 39. Taste the fried noodles.
- 40. Distribute the Asian vegetable fried noodles onto plates.
- 41. Serve the noodles with the sweet and sour sauce.
