Ingredients
- shrimp raw, frozen 500 g
- garlic cloves 1 pc.
- spring onions 1 bunch
- lemons 1 pc.
- soy sauce 3 tsp
- sugar pinch
- cayenne pepper 0.25 tsp
- eggs 2 pc.
- cornstarch 4 tbsp
- breadcrumbs 2 tbsp
- sunflower oil 10 tbsp
- grapefruit 2 pc.
- ginger, fresh 20 g
- coriander, fresh 10 g
Instructions
- 1. Let the shrimp thaw overnight in the refrigerator.
- 2. Peel the garlic and chop it finely.
- 3. Wash the shrimp and pat them dry with a kitchen towel.
- 4. Cut the shrimp into very small pieces.
- 5. Clean the spring onions and shake off excess water.
- 6. Remove the ends of the spring onions.
- 7. Chop the spring onions finely.
- 8. Halve the lemon.
- 9. Squeeze the juice from the lemon.
- 10. Place the shrimp, garlic, and spring onions in a bowl.
- 11. Add 2 teaspoons of soy sauce to the bowl.
- 12. Add the lemon juice to the bowl.
- 13. Add sugar to the bowl.
- 14. Add cayenne pepper to the bowl.
- 15. Separate the eggs by separating the yolk from the white.
- 16. Mix the starch with the egg white.
- 17. Stir the starch-egg white mixture into the shrimp mixture.
- 18. Form 30 small balls from the mixture.
- 19. Place the breadcrumbs in a deep plate.
- 20. Roll the shrimp balls in the breadcrumbs until they are completely covered.
- 21. Heat oil in a pan over medium to high heat.
- 22. Fry the shrimp balls for about 4 minutes on all sides.
- 23. Let the finished balls drain on kitchen paper.
- 24. Thread the shrimp balls onto wooden skewers.
- 25. Segment the grapefruits to catch the juice.
- 26. Dice the grapefruit fillets into small pieces.
- 27. Peel the ginger.
- 28. Chop the ginger finely.
- 29. Wash the coriander.
- 30. Shake the coriander dry.
- 31. Pluck the coriander leaves from the stems.
- 32. Chop the coriander leaves finely.
- 33. Mix the grapefruit, ginger, and coriander with the remaining soy sauce.
- 34. Season the sauce with sugar.
- 35. Serve the sauce together with the skewers.
