  5. 5. Clean the spring onions and shake off excess water.
  6. 6. Remove the ends of the spring onions.
  7. 7. Chop the spring onions finely.
  8. 8. Halve the lemon.
  9. 9. Squeeze the juice from the lemon.
  10. 10. Place the shrimp, garlic, and spring onions in a bowl.
  11. 11. Add 2 teaspoons of soy sauce to the bowl.
  12. 12. Add the lemon juice to the bowl.
  13. 13. Add sugar to the bowl.
  14. 14. Add cayenne pepper to the bowl.
  15. 15. Separate the eggs by separating the yolk from the white.
  16. 16. Mix the starch with the egg white.
  17. 17. Stir the starch-egg white mixture into the shrimp mixture.
  18. 18. Form 30 small balls from the mixture.
  19. 19. Place the breadcrumbs in a deep plate.

  31. 31. Pluck the coriander leaves from the stems.
  32. 32. Chop the coriander leaves finely.
  33. 33. Mix the grapefruit, ginger, and coriander with the remaining soy sauce.
  34. 34. Season the sauce with sugar.
  35. 35. Serve the sauce together with the skewers.
