  1. 1. Peel the ginger and the garlic clove.
  2. 2. Finely dice the ginger and the garlic.
  3. 3. Set aside half a teaspoon of the fine ginger.
  4. 4. Wash two spring onions and chop them finely.
  5. 5. Rinse the lemon under hot water.
  6. 6. Grate about one teaspoon of the lemon zest.
  7. 7. Cut the lemon in half.
  8. 8. Squeeze the juice out of the lemon.
  9. 9. Place the minced meat in a bowl.
  10. 10. Add the garlic, spring onions, remaining ginger, lemon zest, and one tablespoon of lemon juice.
  11. 11. Mix all ingredients thoroughly.
  12. 12. Season the mixture with cinnamon, three tablespoons of soy sauce, and salt.
  13. 13. Place the wooden skewers in a container of cold water.
  14. 14. Shape the meat mixture into elongated balls with a diameter of about three centimeters.
  15. 15. Thread the meatballs onto the soaked skewers.
  16. 16. Grill the skewers on a hot grill for about 15 minutes.
  17. 17. Alternatively, fry the skewers in a pan over medium heat for about 10 minutes, turning them around.
  18. 18. Place the rice in a pot and cover it with about 700 milliliters of salted water.
  19. 19. Bring the water to a boil.
  20. 20. Reduce the heat to low to medium.
  21. 21. Cook the rice covered for about 10 minutes.
  22. 22. Clean the remaining spring onions.
  23. 23. Slice the spring onions into fine rings.
  24. 24. Mix the spring onion rings with the reserved ginger and the remaining soy sauce.
  25. 25. Serve the meatballs together with the rice.
  26. 26. Serve the sauce mixture as a side dish.
