🍰 Vegan Chocolate Mousse Made from Chickpea Water

Ingredients
- chickpeas from the can 530 g
- salt pinch
- powdered sugar 1.5 tbsp
- vanilla sugar 1 packet
- chocolate, dark 200 g
Instructions
- 1. Drain the chickpeas in a sieve and catch the liquid (aquafaba) in a bowl.
- 2. Add salt, powdered sugar, and vanilla sugar to the collected liquid.
- 3. Whip the mixture stiff using a hand mixer with beaters for about 10 minutes.
- 4. Place the whipped liquid in the refrigerator for later use.
- 5. Bring about 500 milliliters of water to a boil in a pot.
- 6. Roughly chop the chocolate and place it in a heatproof bowl.
- 7. Melt the chocolate over the hot water bath while stirring.
- 8. Let the melted chocolate cool down to room temperature.
- 9. Gently fold the cold aquafaba into the cooled chocolate using a spoon.
- 10. Fill the mousse into glasses.
- 11. Place the glasses in the refrigerator overnight.
