  1. 1. Drain the chickpeas in a sieve and catch the liquid (aquafaba) in a bowl.
  2. 2. Add salt, powdered sugar, and vanilla sugar to the collected liquid.
  3. 3. Whip the mixture stiff using a hand mixer with beaters for about 10 minutes.
  4. 4. Place the whipped liquid in the refrigerator for later use.
  5. 5. Bring about 500 milliliters of water to a boil in a pot.
  6. 6. Roughly chop the chocolate and place it in a heatproof bowl.
  7. 7. Melt the chocolate over the hot water bath while stirring.
  8. 8. Let the melted chocolate cool down to room temperature.
  9. 9. Gently fold the cold aquafaba into the cooled chocolate using a spoon.
  10. 10. Fill the mousse into glasses.
  11. 11. Place the glasses in the refrigerator overnight.
