  3. 3. Cut the fruit flesh into small cubes.
  4. 4. Halve the lemon.
  5. 5. Squeeze the juice from the lemon.
  6. 6. Place the apricot cubes into a pot.
  7. 7. Add two tablespoons of lemon juice.
  8. 8. Add vanilla sugar to the pot.
  9. 9. Add pectin sugar to the pot.
  10. 10. Place the pot on medium heat.
  11. 11. Bring the mixture to a boil.
  12. 12. Let the jam simmer for about four minutes.
  13. 13. Take one teaspoon of the warm jam.
  14. 14. Dab the jam onto a cold plate.
  15. 15. Wait for about one minute.
  16. 16. Check if the jam has set.
  17. 17. If it is still liquid, cook it for one to two minutes longer.
  18. 18. Repeat the setting test if necessary.
  19. 19. Fill the hot jam into four clean screw-top jars.
  20. 20. Seal the jars tightly.
  21. 21. Turn the jars upside down.
  22. 22. Let the jam cool down inside the jars.
