🥤 Fresh Lemonade with Apricots and Thyme

Ingredients
- thyme, fresh 30 g
- lemons 1 pc.
- water 150 ml
- sugar 125 g
- apricots, fresh 800 g
- carbonated water 800 ml
Instructions
- 1. Thoroughly rinse the thyme sprigs under running water.
- 2. Carefully dry the thyme leaves with a kitchen towel.
- 3. Cut the lemon in half.
- 4. Squeeze the juice out of both lemon halves.
- 5. Put the lemon juice, water, and sugar into a saucepan.
- 6. Heat the mixture on medium heat.
- 7. Bring the liquid to a boil.
- 8. Stir until the sugar has completely dissolved.
- 9. Add the prepared thyme sprigs to the hot liquid.
- 10. Simmer the mixture while stirring constantly for about 1 to 2 minutes.
- 11. Pour the liquid through a fine mesh sieve into a bowl to remove the thyme leaves.
- 12. Let the syrup cool down to room temperature.
- 13. Wash the apricots thoroughly.
- 14. Cut the apricots in half.
- 15. Remove the pits from the apricot halves.
- 16. Put the apricot pieces and the cooled syrup into a tall blending cup.
- 17. Blend the mixture finely using a hand blender or stand blender.
- 18. Distribute the apricot syrup mixture evenly among several glasses.
- 19. Fill the glasses with cold mineral water.
- 20. Stir the lemonade gently.
- 21. Serve the drink well chilled.
