  1. 1. Thoroughly rinse the thyme sprigs under running water.
  2. 2. Carefully dry the thyme leaves with a kitchen towel.
  3. 3. Cut the lemon in half.
  4. 4. Squeeze the juice out of both lemon halves.
  5. 5. Put the lemon juice, water, and sugar into a saucepan.
  6. 6. Heat the mixture on medium heat.
  7. 7. Bring the liquid to a boil.
  8. 8. Stir until the sugar has completely dissolved.
  9. 9. Add the prepared thyme sprigs to the hot liquid.
  10. 10. Simmer the mixture while stirring constantly for about 1 to 2 minutes.
  11. 11. Pour the liquid through a fine mesh sieve into a bowl to remove the thyme leaves.
  12. 12. Let the syrup cool down to room temperature.
  13. 13. Wash the apricots thoroughly.
  14. 14. Cut the apricots in half.
  15. 15. Remove the pits from the apricot halves.
  16. 16. Put the apricot pieces and the cooled syrup into a tall blending cup.
  17. 17. Blend the mixture finely using a hand blender or stand blender.
  18. 18. Distribute the apricot syrup mixture evenly among several glasses.
  19. 19. Fill the glasses with cold mineral water.
  20. 20. Stir the lemonade gently.
  21. 21. Serve the drink well chilled.
