  3. 3. Remove the stems and seeds from the pepper halves.
  4. 4. Dice the pepper flesh into small cubes.
  5. 5. Wash the apricots thoroughly.
  6. 6. Halve the apricots.
  7. 7. Remove the pits from the apricot halves.
  8. 8. Finely dice the apricot flesh.
  9. 9. Clean the spring onions.
  10. 10. Dry the spring onions with a kitchen towel.
  11. 11. Trim off the root ends of the spring onions.
  12. 12. Slice the spring onions into thin rings.
  13. 13. Wash the lemon thoroughly.
  14. 14. Grate about one teaspoon of lemon zest.
  15. 15. Cut the lemon in half.
  16. 16. Squeeze the juice from one lemon half.
  17. 17. Wash the basil.
  18. 18. Pluck the basil leaves from the stems.
  19. 19. Chop the basil leaves finely.
  20. 20. Place the diced peppers, apricots, and spring onions into a bowl.
  21. 21. Add the grated lemon zest to the bowl.
  22. 22. Add one tablespoon of lemon juice to the bowl.
  23. 23. Mix all ingredients in the bowl thoroughly.
  24. 24. Season the mixture with salt to taste.
