Ingredients
- Peppers, red 1 pc.
- Apricots, fresh 4 pc.
- Spring onions 2 pc.
- Lemons 1 pc.
- Basil, fresh 20 g
- Salt pinch
- Pepper, black ground pinch
- Sugar pinch
Instructions
- 1. Rinse the peppers thoroughly under running water.
- 2. Cut the peppers in half.
- 3. Remove the stems and seeds from the pepper halves.
- 4. Dice the pepper flesh into small cubes.
- 5. Wash the apricots thoroughly.
- 6. Halve the apricots.
- 7. Remove the pits from the apricot halves.
- 8. Finely dice the apricot flesh.
- 9. Clean the spring onions.
- 10. Dry the spring onions with a kitchen towel.
- 11. Trim off the root ends of the spring onions.
- 12. Slice the spring onions into thin rings.
- 13. Wash the lemon thoroughly.
- 14. Grate about one teaspoon of lemon zest.
- 15. Cut the lemon in half.
- 16. Squeeze the juice from one lemon half.
- 17. Wash the basil.
- 18. Pluck the basil leaves from the stems.
- 19. Chop the basil leaves finely.
- 20. Place the diced peppers, apricots, and spring onions into a bowl.
- 21. Add the grated lemon zest to the bowl.
- 22. Add one tablespoon of lemon juice to the bowl.
- 23. Mix all ingredients in the bowl thoroughly.
- 24. Season the mixture with salt to taste.
- 25. Season the mixture with pepper to taste.
- 26. Season the mixture with sugar to taste.
- 27. Transfer the salsa to a serving plate.
- 28. Garnish the salsa with the chopped basil.
