  1. 1. Preheat the oven to 150 °C (convection). Chop the pine nuts. Halve the apricots, remove the pit, and dice the flesh into small pieces. Separate the eggs and use the egg yolks for something else.
  2. 2. In a bowl, beat the egg whites together with a pinch of salt and nutmeg using a hand mixer until stiff. Then slowly drizzle in the sugar and continue beating until the mixture is creamy and glossy. Gently fold in the pine nuts and the apricot cubes.
  3. 3. Using two teaspoons, place 20 mounds of the macaroon mixture onto a baking sheet lined with baking paper. Bake them in the oven for about 30 minutes, until they are lightly browned and crispy. Let the apricot macaroons cool down and serve them. Enjoy!
