🍰 Apple Crumble with Zabaione

Ingredients
- apples, red 500 g
- sugar 175 g
- cinnamon pinch
- butter 60 g
- wheat flour, Type 405 100 g
- salt pinch
- eggs 4 pcs.
- cloves 0.5 tsp
Instructions
- 1. Preheat the oven to 180 °C (top/bottom heat). Peel the apples, halve them, remove the core, and cut them into wedges. In a bowl, mix 2 tbsp sugar with a pinch of cinnamon and toss the apple wedges in it.
- 2. Line a greased baking dish with the apple wedges. In the bowl, knead the flour with the butter into crumbly pieces, add 50 g sugar and a pinch of salt, and sprinkle the mixture over the apples. Bake everything in the oven for about 35 minutes.
- 3. In the meantime, separate the eggs and use the egg whites for something else. Set a pot with water on. In a heatproof bowl, beat the egg yolks, sugar, cloves, and port wine until creamy, then continue beating over a water bath until it thickens.
- 4. Take the apple crumble out of the oven, let it cool briefly, and serve it together with the zabaione. Enjoy your meal!
