🍰 Juicy Apple Cake with Crunchy Marzipan Crumbles

Ingredients
- lemon 1 pc.
- apples, green 6 pc.
- eggs 2 pc.
- white rum 30 ml
- milk 50 ml
- salt pinch
- sugar 125 g
- butter 175 g
- wheat flour, Type 405 350 g
- baking powder 1 tsp
- marzipan raw mass 100 g
Instructions
- 1. Preheat your oven to 175 degrees Celsius using top and bottom heat.
- 2. Squeeze the juice from half a lemon into a small bowl.
- 3. Peel the apples and cut them in half lengthwise.
- 4. Remove the core from the apple halves.
- 5. Make several small cuts into the rounded side of the apples with a knife.
- 6. Brush the apples with the lemon juice to prevent them from browning.
- 7. Set the prepared apples aside.
- 8. Beat eggs, rum, milk, a pinch of salt, sugar, and 125 grams of soft butter in a large bowl until creamy using a hand mixer.
- 9. Add 200 grams of flour and baking powder to the mixture.
- 10. Mix everything together with the mixer until you have a smooth batter.
- 11. Grease a 26-centimeter springform pan.
- 12. Pour the batter into the prepared pan.
- 13. Place the apple halves on the batter with the cut side facing up.
- 14. Bake the cake in the preheated oven for about 20 minutes as a pre-bake.
- 15. Grate the marzipan coarsely using a grater while the cake pre-bakes.
- 16. Mix the grated marzipan, 150 grams of flour, and 50 grams of soft butter in a separate bowl.
- 17. Work the mixture with your fingers until small crumbs form.
- 18. Take the cake out of the oven.
- 19. Distribute the marzipan crumbles evenly over the surface of the cake.
- 20. Put the cake back into the oven.
- 21. Finish baking the cake for another 40 to 45 minutes.
- 22. Cover the crumbles with aluminum foil in the last 10 to 15 minutes if they are getting too dark.
- 23. Carefully remove the finished cake from the oven.
- 24. Let the cake cool completely before slicing it.
