🍳 Crispy Apple Rolls

Ingredients
- Milk 150 ml
- Yeast, fresh 42 g
- Brown sugar 70 g
- Spelt flour, Type 630 525 g
- Salt Pinch
- Cinnamon 0.5 tsp
- Eggs 1 pc
- butter 50 g
- Apple sauce 150 g
- Apples, green 1 pc
Instructions
- 1. Warm the milk in a pot until it is lukewarm.
- 2. Crumble the yeast into the warm milk.
- 3. Stir in one tablespoon of sugar until the yeast and sugar have dissolved.
- 4. Let the yeast milk rest covered for ten minutes.
- 5. Add 500 grams of flour, salt, cinnamon, and the remaining sugar to a large bowl.
- 6. Add the egg, butter, and apple puree to the bowl.
- 7. Pour in the yeast milk and knead everything into a smooth dough.
- 8. Let the dough rise in a warm place for about 30 minutes.
- 9. Peel the apple and cut it into quarters.
- 10. Remove the core from the apple.
- 11. Grate the apple coarsely.
- 12. Mix the grated apple with the remaining flour in a small bowl.
- 13. Knead the apple-flour mixture into the dough briefly.
- 14. Let the dough rise again for about 30 minutes.
- 15. Preheat the oven to 200 degrees Celsius fan.
- 16. Place the dough on a lightly floured work surface.
- 17. Dust the dough lightly with flour.
- 18. Divide the dough into 12 equal portions.
- 19. Shape each portion into an oval roll using floured hands.
- 20. Place the rolls on a baking sheet lined with baking paper.
- 21. Let the rolls rise for another 5 minutes.
- 22. Optionally brush the rolls with milk for a nice shine.
- 23. Bake the rolls in the preheated oven for approx. 20 minutes until golden brown.
- 24. Let the finished rolls cool down.
