  1. 1. Warm the milk in a pot until it is lukewarm.
  2. 2. Crumble the yeast into the warm milk.
  3. 3. Stir in one tablespoon of sugar until the yeast and sugar have dissolved.
  4. 4. Let the yeast milk rest covered for ten minutes.
  5. 5. Add 500 grams of flour, salt, cinnamon, and the remaining sugar to a large bowl.
  6. 6. Add the egg, butter, and apple puree to the bowl.
  7. 7. Pour in the yeast milk and knead everything into a smooth dough.
  8. 8. Let the dough rise in a warm place for about 30 minutes.
  9. 9. Peel the apple and cut it into quarters.
  10. 10. Remove the core from the apple.
  11. 11. Grate the apple coarsely.
  12. 12. Mix the grated apple with the remaining flour in a small bowl.
  13. 13. Knead the apple-flour mixture into the dough briefly.
  14. 14. Let the dough rise again for about 30 minutes.
  15. 15. Preheat the oven to 200 degrees Celsius fan.
  16. 16. Place the dough on a lightly floured work surface.
  17. 17. Dust the dough lightly with flour.
  18. 18. Divide the dough into 12 equal portions.
  19. 19. Shape each portion into an oval roll using floured hands.
  20. 20. Place the rolls on a baking sheet lined with baking paper.
  21. 21. Let the rolls rise for another 5 minutes.
  22. 22. Optionally brush the rolls with milk for a nice shine.
  23. 23. Bake the rolls in the preheated oven for approx. 20 minutes until golden brown.
  24. 24. Let the finished rolls cool down.
