🍰 Classic Apple Tarte Tatin with Creamy Quark Whipped Cream

Ingredients
- butter 190 g
- powdered sugar 50 g
- salt pinch
- vanilla sugar 24 g
- eggs 1 pc.
- wheat flour, type 405 280 g
- apples, red 800 g
- apricot jam 200 g
- quark 40 % fat in dry matter 250 g
- whipping cream 75 ml
Instructions
- 1. Mix 150 grams of soft butter, powdered sugar, a pinch of salt, 8 grams of vanilla sugar, one egg, and the flour in a bowl using a hand mixer with dough hooks until you have a smooth dough.
- 2. Wrap the dough tightly in plastic wrap and place it in the refrigerator for at least one hour to rest.
- 3. Preheat your oven to 180 degrees Celsius (convection mode).
- 4. Grease a round tart pan with a diameter of about 28 centimeters thoroughly with butter.
- 5. Wash the apples, peel them, cut them into quarters, and remove the core.
- 6. Cut the apple quarters into even wedges.
- 7. Melt the remaining butter in a frying pan over medium heat.
- 8. Sear the apple wedges in the hot butter for about two minutes.
- 9. Add 150 grams of jam to the pan and let it melt for about two minutes.
- 10. Remove the apple wedges from the pan using a slotted spoon and place them into the prepared tart pan.
- 11. Let the jam in the pan cook down for one to two minutes over medium heat until it caramelizes.
- 12. Pour the caramelized jam evenly over the apples in the pan.
- 13. Lightly flour a work surface and roll out the shortcrust pastry into a round shape with a diameter of about 30 centimeters.
- 14. Carefully place the dough sheet over the apples in the pan.
- 15. Fold the edges of the dough inward and press them firmly to ensure a good seal.
- 16. Bake the tart for about 30 minutes in the preheated oven.
- 17. Remove the tart from the oven and let it rest in the pan for about 10 minutes.
- 18. Stir the quark (curd cheese) in a bowl with the remaining jam and vanilla sugar until the mixture is creamy.
- 19. Whip the cream in a tall container using a hand mixer with a whisk attachment until stiff.
- 20. Gently fold the whipped cream into the quark mixture.
- 21. Carefully invert the tart onto a serving plate.
- 22. Serve the tart warm together with the quark cream.
