🍰 Apple Crumble Pockets with Yeast Dough

Ingredients
- yeast, fresh 1 pcs
- water 30 g
- sugar 180 g
- oat drink 250 ml
- wheat flour, Type 405 700 g
- salt 1 tsp
- vanilla extract 1 tsp
- vegan butter alternative 180 g
- cinnamon 1.5 tsp
- apples, red 4 pcs
- lemons 1 pcs
- almonds, sliced 100 g
- powdered sugar 100 g
Instructions
- 1. Put the yeast, 150 milliliters of warm water, and 80 grams of sugar into a large bowl and stir the ingredients briefly.
- 2. Add the plant-based drink, 500 grams of flour, 1 teaspoon of salt, vanilla extract, and 80 grams of vegan butter to the bowl.
- 3. Knead the dough for about 10 minutes until it is smooth.
- 4. Take the dough out of the bowl and place it on a lightly floured work surface.
- 5. Shape the dough into a ball and let it rise covered for 1 hour at room temperature until it has doubled in size.
- 6. Put 200 grams of flour, 100 grams of sugar, 1 pinch of salt, 0.5 teaspoon of cinnamon, and 100 grams of cold vegan butter into a mixing bowl.
- 7. Knead the ingredients until crumbs form.
- 8. Put the crumbs in the refrigerator.
- 9. Divide the dough into 16 equal pieces and shape them into small balls.
- 10. Roll the balls on a floured work surface into circles about 10 centimeters in size.
- 11. Place the circles directly on baking paper or parchment paper.
- 12. Core the apples and cut them into thin slices.
- 13. Drizzle the apple slices in a bowl with the lemon juice so they do not turn brown.
- 14. Top each pocket with 3 to 4 apple slices.
- 15. Sprinkle the crumbs and slivered almonds over them.
- 16. Do not throw away the excess lemon juice in the bowl, as you will need it for the cinnamon glaze.
- 17. Bake the first tray for 20 minutes at 190 degrees conventional heat in a cold oven.
- 18. Cover the other trays so that the dough does not dry out.
- 19. Stir 1 teaspoon of cinnamon and powdered sugar with the remaining lemon juice in a bowl.
- 20. Spread the glaze with a spoon over the baked crumble pockets.
- 21. Serve the pockets warm or cold.
