  1. 1. Put the yeast, 150 milliliters of warm water, and 80 grams of sugar into a large bowl and stir the ingredients briefly.
  2. 2. Add the plant-based drink, 500 grams of flour, 1 teaspoon of salt, vanilla extract, and 80 grams of vegan butter to the bowl.
  3. 3. Knead the dough for about 10 minutes until it is smooth.
  4. 4. Take the dough out of the bowl and place it on a lightly floured work surface.
  5. 5. Shape the dough into a ball and let it rise covered for 1 hour at room temperature until it has doubled in size.
  6. 6. Put 200 grams of flour, 100 grams of sugar, 1 pinch of salt, 0.5 teaspoon of cinnamon, and 100 grams of cold vegan butter into a mixing bowl.
  7. 7. Knead the ingredients until crumbs form.
  8. 8. Put the crumbs in the refrigerator.
  9. 9. Divide the dough into 16 equal pieces and shape them into small balls.
  10. 10. Roll the balls on a floured work surface into circles about 10 centimeters in size.
  11. 11. Place the circles directly on baking paper or parchment paper.
  12. 12. Core the apples and cut them into thin slices.
  13. 13. Drizzle the apple slices in a bowl with the lemon juice so they do not turn brown.
  14. 14. Top each pocket with 3 to 4 apple slices.
  15. 15. Sprinkle the crumbs and slivered almonds over them.
  16. 16. Do not throw away the excess lemon juice in the bowl, as you will need it for the cinnamon glaze.
  17. 17. Bake the first tray for 20 minutes at 190 degrees conventional heat in a cold oven.
  18. 18. Cover the other trays so that the dough does not dry out.
  19. 19. Stir 1 teaspoon of cinnamon and powdered sugar with the remaining lemon juice in a bowl.
  20. 20. Spread the glaze with a spoon over the baked crumble pockets.
  21. 21. Serve the pockets warm or cold.
