🍽️ Apple Red Cabbage with Potato Dumplings in Macadamia Nut Crust

Ingredients
- red onions 1 pc.
- red apples 2 pc.
- oil 4 tbsp
- red cabbage from jar 720 ml
- cinnamon pinch
- salt pinch
- water 100 ml
- macadamia nuts, roasted and salted 50 g
- mini potato dumplings 750 g
- breadcrumbs 50 g
- pepper, black ground pinch
Instructions
- 1. Halve the onion and peel it. Cut the onion into small dice.
- 2. Wash the apples. Cut the apples into quarters and remove the core.
- 3. Cut the apple quarters into wedges about 1 cm thick.
- 4. Heat 2 tablespoons of oil in a pot over medium heat.
- 5. Add the diced onion and apple wedges to the pot. Sauté the vegetables and fruit for about 3 minutes.
- 6. Add the red cabbage to the pot. Season with cinnamon and salt.
- 7. Add some water. Cover the pot and cook the red cabbage over medium heat for about 10 minutes. Stir occasionally.
- 8. Turn off the stove and keep the red cabbage warm.
- 9. Fill another pot with about 5 liters of water and add salt. Cover the pot and bring the water to a boil.
- 10. Finely chop the macadamia nuts.
- 11. Place the potato dumplings into the boiling salted water. Cook the dumplings for about 10 minutes without a lid. Make sure the water is not boiling vigorously.
- 12. Drain the dumplings in a sieve. Let them drip off and place them on a plate.
- 13. Wipe out the pot used for the red cabbage. Heat 2 tablespoons of oil in it over medium heat.
- 14. Add the breadcrumbs and chopped macadamia nuts to the pot. Season with salt and pepper.
- 15. Toast the nut-breadcrumb mixture over medium heat for about 2 minutes until golden brown, shaking the pan occasionally. Turn off the stove.
- 16. Add the potato dumplings to the nut-breadcrumb mixture. Toss the dumplings until they are evenly coated.
- 17. Finally, season the red cabbage with salt and pepper to taste.
- 18. Serve the red cabbage on plates. Add the nut-coated dumplings. Serve the dish.
